Vendakka(okra/bhindi) Mappas is a traditional Kerala-style dish featuring okra (vendakka) cooked in a rich and creamy coconut milk gravy. To prepare this flavorful dish, start by washing and cutting the okra into small pieces and fry them for few minutes. Heat oil in a pan and sauté mustard seeds, curry leaves, green chilli,sliced onions, ginger and garlic until the onions turn transperant.
Next, add chopped tomatoes and stir until they become soft and mushy. Add the okra pieces along with red chilli powder, pepper powder, turmeric powder, coriander powder, vegetable masala and salt. Sauté the mixture until the okra is cooked through. Finally, pour in thick coconut milk and let the curry simmer on low heat until it thickens slightly, making sure not to boil the coconut milk to prevent curdling. Garnish with fresh tadka made from mustard seeds, shallots and curry leaves and serve Vendakka Mappas hot with steamed rice/appam/chappathi for a delicious and comforting meal.
