I tried to make Your potatoes duphinois. Used the mandolin (that is not only dangerous, but also a bastard to clean); but you are right: It is realy tasty - with a pork chop (reverse seared) - even gave my neighbour one (realising the star of the show was the potatoes), but a prime cut deserves the best potatoes.
That is something I have to do next time I shoot a deer. Might do this with Ramdalf even (ram that decided to volunteer for freezer camp). He’s only 70-80lbs live weight.
Hey Scott, great video. I hunt venison and when I butcher (thanks so much for all of your butchery videos) I discard the fat. The reason I do is because people have told me that venison fat is unpalatable. The thing is, they have also told me that feral hogs are unpalatable, which is certainly untrue - I've turned even large feral hogs into absolutely beautiful dishes. What are your experiences with deer fat?
I've tried whitetail deer fat on a few occasions and sometimes it tasted fine, sometimes it was disgusting (heard it depends on diet). Every time the texture was extremely off-putting. Best way I can describe it is candle wax that coats your mouth.
@@daigledj You’re right, it really coats your mouth and throat. I don’t mind it but I’ve never had that perception of coating from any other kind of meat.
There was one in the first one too, but I think it might actually be a tendon from the tenderloin carried over because it seems to appear when he places the filets.
That's a Chinese water deer, or Muntjack. The stags only get as big as a Labrador retriever, does are smaller. Where I live they are an agricultural pest, and often end up as roadkill.
