Also, every time you mention about Nagaraj master it goes to show how in addition to your father/grandfather you have so much respect for him. Samayal kalai is a noble one as it is not just for satisfying the taste buds/stomach/ intestines. As we all know, it is an Aahuti for jatharagni in the digestive system. Love your passion. If you don't mind I would like to add the following. An eatery's true name and fame come from the owner's unwavering philosophy (as exemplified by your father), their employees' goodwill and their combined hard work, not from cinema personalities visiting them. Yes they do have a place in our society like most of us, but in my humble opinion we don't have to associate them with other things to seek endorsement or credence.

Almighty blessings to you and daddy. I am also 1944 model. And I enjoy your excellent cooking. We used to live in Salem upto 1950. Masada domain and coconut chutney was my favorite.

Chef you are a natural in your presentation with a subtle humor and cool madras accent(occasional) . The medu bakoda you made are mouth watering. Reminds me of my childhood days eating at Udupi hotel near Panagal Park.

Quite an interesting recipe. Liked it a lot. I know this is an authentic recipe but is there a substitute for Vanaspathi/dalda. We stopped using it sometime in the 80s .Can I use ghee or butter instead?
