One of the ceiling fans is actually a GEC Everest! Its probably original to the church and it may have had more than just the 1 but later on about 15-20 years after the GEC Everest, The DEMC's would have been installed. That GEC would have had its typical 6 speed regulator but the wiring in it probably frayed and the condition of it was not up to standard. The other DEMC regulator's plastic was probably same case and all cracked once again having to replace it. And the reason why that other DEMC connected to the brown regulator is slow is because its got a bad capacitor.
Love your video (I'm a fellow Queenslander) and like you I love vintage fans. DEMC Ceiling fans were available in Australia from the early 1970's through to the early 1980's. D.E.M.C stood for Din Wai Electric Manufacturing Company and they were based in Hong Kong. There were three sizes, and two colours - white being the most common and chocolate brown a less common variant. The controllers were made in both colours to match the fan. I still have 3 operating in my house on the original controllers. Mine are white although I did have a lone brown controller from somewhere.

Very nice installation. These fans would be from around the late 1970's to mid 1980's. It seems they have nice slow low speeds. The fan that's different appears to be a TAT.
