I know this is a three year old video and there are a lot of questionable/indefensible choices made by Monsieur Martin but I’m gonna defend him on a couple key points I saw people in chat making fun of him for: 1. Using lemon juice is extremely common for acidity to cut through richness. Acidity is absolutely necessary in a mushroom dish with a cream sauce. It doesn’t affect the flavor as much as you think, rather it enhances what’s already there. He could’ve used white wine but it’s not as acidic as lemon juice, so he would’ve had to use more of it, thereby affecting the flavor more. 2. He uses unsalted butter because different brands (and even different batches) of salted butter can have wildly different salt content. Using unsalted butter and then adding salt later allows for more control over the flavor of the final product and is extremely common. 3. “Brown sauce” in this case refers to a specific type of sauce that’s more akin to gravy. It’s reduced meat stock with a roux. Very common in French cuisine, and also the topping for poutine. That’s why he’s adding multiple “brown sauces” into the dish.
