Vibrant Basil & Strawberry Puree: Crafting Two Exquisite Cocktails!

Strawberries and basil are a perfect match for a vibrant puree and craft cocktail. How to pair strawberries in two cocktails and how to make them even more exquisite? For these two versions you'll need strawberries, basil, rooibos tea, and of course FIOL prosecco - Rosé this time. We shot this at a beautiful Italian villa in Treviso - the home of FIOL (and the Tiramisu!). Created by the head bartender at "Harry's Bar" in 1948, Giuseppe Cipriani, the Bellini is a cocktail made with prosecco and the pureed pulp and juice of the "Verona" white peach, but taking advantage of FIOL Rosé, we’ll make a Rossini instead. We’ll then end with my take on this cocktail by adding tea and balsamic vinegar to bring in more flavors from Italian cuisine, so if you’re ready, pull up a chair and get comfortable. It’s Cocktail Time!

What is the benefit of building in the stirring glass as opposed to directly in the drinking glass? Apart from aesthetics, it seems like you’d lose some of the carbonation.

I've done many Bellini services for outdoor weddings, and I've learned that, due to the viscous nature of fruit purees, they do not as easily dissipate into sparkling wine as a liqueur or a simple syrup. Vigorous integration is necessary for the final product: otherwise, the puree has a tendency to sit in the bottom of the glass due to density differences, and not integrate well. As a middle ground, stir your puree with half the amount of total wine, strain into your glass, and top up with fresh wine, to retain that effervescence.

Agar agar needs to be heated, and it adds some taste to the final product. Both are not cases with Xanthan.

@@KevinKos i know that their is more than one way but i know one simple and traditional. Desired amount of strawberries, half of strawberries weigh sugar or to taste, just a pinch of citric acid to prevent jellying but you should cook it a bit to concentrate then purée it
