Professor Wells draws on theories of foraging in the animal world to understand why this is happening and what pubs must do to ensure this much valued but endangered species does not become extinct.
Her talk covers the impact of modern technologies, which have helped trigger an explosion in micro-breweries and craft ales, to the tilt towards environmental and social sustainability in business models. She also looks at the rise of low alcohol products and entertainment to show how the pub, as it has always done, continues to evolve and endure.
