Looking forward to that. I'd like to see the Mora laminated Carbon steel too. But then, you can't really get sharper on a Scandi grind, can you?

I like the stainless opinel that LL Bean sells made of reclaimed wood from Moosehead Lake. Although my favorite opinel are the carbon steel.

I'd say you nailed it. I have used these for decades and in my experience Victorinox steel is incredibly soft and even the original grind will dull quickly against wood. However, its incredibly rust resistant, they do strop right back up and they take a really sharp edge. As I find these tools are best used for personal grooming and light tasks, a thinner edge should work well. I have often shaved with mine when I'm working away from home.

The kimjo I use mine for spoon carving. And cleaning rabbits I caught for food so they were good if you knows how to sharpen them I use diamond sharpners by DMT paddle stones then finished blade on my strop with stropping compound called smurf poo 🐾🐺👍

Just reground one of my recent preowned Victorinox acquisitions. Thinned the primary grind, not just the edge grind.

The lower dps edges are great for what most people do with pocket knives. When I get a cheap knife, I practice free hand sharpening and take the angle way back. Mostly 440c, 8cr and Sandvik. Much better slicers and no rolling, but the hardest use has been cardboard cutting. I end up with a convex edge though because I can’t control my angle precisely. Great series!

Excellent! Thanks for the test Pete! Now I'll try it on diamonds. After I buy that knife sharpener. And learn how to use it. And find some diamonds.

I have an Ottermesser Anchor knife which has a simple stainless steel. It's sharpened to 15 degrees per side and while it slices really well it isn't the greatest performer in the long run. But it strops back SO easily! Stropping it back to sharp definitely is a thing.

Is victorinox steel tough ? I know it’s corrosion resistance very good 👍🏻, and it seems to be tough to me , but I’m no expert
@zackslaststand
@zackslaststand 6 лет назад
One steel I'd be very interested to see tested is CTS XHP. That steel has some very interesting characteristics. It's kinda like if you took D2, made it stainless and shrunk the carbides down a bit. It's still not a fine carbide steel but with CPM technology XHP is definitely fine enough to bring down edge angles and it's also much higher hardness than your S30Vs and your S35VNs and the other midrange supersteels. I think it's probably the strongest contender out of the middle of the pack super steels for an unleashed to the max test.
@zackslaststand
@zackslaststand 6 лет назад
S35VN is probably a close second in the midlevel super class of steels.

I think those edges could stand up to wood! My thought is, if a scandi-ground Mora Companion with 11.5 degree bevels can work wood effectively, then likely other knives can survive it too. Granted, there’s a lot more steel behind the edge of a scandi-ground knife, so I could very well be wrong!

Good one. Victorinox might just be the knife that we've all had at one time , or another. So it's a good one to have in the comparison list. As a boy, I learned early that it's nice to have a 2nd blade on a Swiss Army knife. That first one gets dull quickly(I think)....and sharpens quickly.

Is that like a blister relief, or hot spot relief type ointment Jack? I'd rub Eucalyptus or Tea Tree oil, or Goanna or even Paw-Paw (Papaya) ointment into my hands. But then again, we Aussies don't have time to worry about hand-care. Blister borne Callouses are a sign of man-hood dude. But yeah, Pete certainly sacrifices for the team. Poor bugger. Now, get back to the Sisal you steel-testing minion!

@zackslaststand
@zackslaststand 6 лет назад
ooh 90 cuts. I was off but it looks like it blunted by edge rolling so I think I was spot on that. I think the victorinox might be capable of more cuts by adding 1 to 0.5 degree per side to combat the rolling.

2011 "Victorinox Tinker "Rosta Frei" Rope Cutting/Edge Retention Test" ..
@ogenmatic
@ogenmatic 6 лет назад
The sisal rope shortage continues to plague Australia. Good job, Pete! Having owned several Grips in 154CM I’ve noticed significant (albeit never measured) variations in edge retention among them. Wonder if you’d consider doing some testing of multiples within a brand & model. You know - in your spare time... Ha! Keep up the good work, my friend.
@Oozy9Millimeetah
@Oozy9Millimeetah 6 лет назад
ogenmatic 154cm takes an stubborn and very small burr if you don't know how to look for it and clean it off, there's most likely your issue.
@jackfarmboy

The sisal rope industry is now booming in australia bringing jobs and money into local economys and well as establishing itself as the go to knife cutting medium as knife channels stock up on it creating more demand... Not all heros wear capes

@BradGryphonn
@BradGryphonn 6 лет назад
True that Chandler Hermansen. I like 20 degrees ps on mine. I like to play with my Opinels though. Many years ago I had a No8 that could take a superfine edge. Back then I knew nothing of edges and knife steels. All I knew was that the knife was awesome with a fine barber's razor edge. Of course, after 15-20 years it ended up with a recurve. Then I snapped the tip and it was like the life left the blade. Could never get it as sharp. Actually, after reshaping it looked like the Opinel 'safety/beginner' Opinel.
