Ingredients:
2 cans sweet corn
1/3 cup dried shrimps
1 shallot
2-3 green onions
1 clove of garlic
1/4 tsp salt
1/4 tsp sugar
1/4 tsp fish sauce
1-2 tbsp vegetable oil
Instructions:
1. Soak your dried shrimps in water for at least 20 minutes then drain. This is to soften the shrimp.
2. Chop your green onions and separate the white and green parts.
3. Mince your garlic and shallot.
4. Drain out two cans of sweet corn.
5. Heat up vegetable oil in a wok and add in your garlic, shallot and white part of green onions. Stir fry till it's slightly charred.
6. Add in your corn, salt, sugar and dried shrimps. Mix well.
7. Add in the green part of your onions and butter then stir fry till the butter has fully melted.
8. Season to taste with some fish sauce. I added about 1 tsp.
9. Then continue to stir fry for a few more minutes. If you like it a bit charred like I do I'll cook it longer. I also lay the corn out flat and let it sit and cook till it's charred.
