This dish is so rare for me that I've eaten it only once in my life. Just looking at the prepwork makes me understand why. I need to eat more of this traditional cuisine before I leave this Earth. Thank for sharing Chef!
Aww, it can be made simpler, although the taste won't be completely the same, the one in this video we only eat at restaurants. The tradidional rice would be the leftover, "burnt" rice that we scraped out of the bottom of the pot, so imagine you cook just a bit of rice but forgot to watch the pot and have to scrape it out of the pot (soak the pot afterward to wash) or If you can get rice crispies (must be bland). The sauce would be the star actually, you can make a simple sauce with soy/fish sauce + sugar, other ingredients like pepper/chillies, garlic, Chinese sausage, dried shrimps are all optional. Put it on a pan and heat until slightly thickens. 😊
It is not quite a tradition dish. Maybe a reconstruct of a traditional dish in the old day. Back when we dont have electric and rice cooker, we cook rice in clay pot on open fire. After the rice is done, the clay pot retain the heat very well so it keep on cooking. By the end of the meal, the children usually scrape off the crispy burnt layer at the bottom of the pot and dip it in whatever sauce that left over on the table to soften it a little bit. Back then people dont go out of the way to make it like this, the crispy rice just happen whenever we make rice like an after thought.
@@ChinhmyHo everything is unhealthy if eat too much, even water. A treat once in awhile to satisfy your taste buds is good for your mental health. The sauce take 15 mins to make, most ingredients are vietnamese pantry staple.
I think it have: Rice Scallion Shalot Peper Chillli Chilli sauce Sugar MSG Dried shrimp Pork (normal) Pork (but this pork was sundried and tie very thin) You can read the subtitle in video (This food have taste is salty and little sweet) You can change the amount of sugar
Fry cooked non cold rice ( better sticky rice) Chop scallion and shallot Fry pork belly in low heat to extract fat Use fat from pork pour in scallion Keep stir pork with shallot and add coconut water Add fish sauce, sugar, chilli, dry shrimp and pepper Add shallion fat in rice surface
Actually every countries have this dish because the cooker (the old one) always leaves behind crunchy rice at the bottom. And the sauce depends on the taste of that country

Vietnamese foods usually have pork in it so it not much i can recommend to you. You can try banh mi but with different kind of filled like beef, fishcake or chicken, or com tam but with grilled chicken.
There is not much to my knowledge, but if you have a chance to go to Vietnam. There is Fish, Seafood hotpot, Chicken/Duck Porridge served with Chicken/Duck salad and fish sauce. And there is Muslim Broken Rice in Saigon City with beef and chicken instead of pork

I’ve never eaten Vietnamese food, I don’t have the opportunity now (no restaurants). This looks utterly delicious, I live crunchy rice and make do with Tahdig!
