When I was in Saigon, my goal, as you may have already guessed, was to eat and learn as much about local Vietnamese food as I could (check out my full post of 25 must-eat Vietnamese dishes in Saigon here: migrationology.com/2015/02/vie.... One of dishes I was truly looking forward to eating was bánh canh cua, thick noodles in more of a gravy than a soup.
Thanks to a number of you who recommended it to me, and suggested I try a restaurant called Bánh Canh Cua Trần Khắc Chân, that’s where I had my very first taste of this delightful Vietnamese food. The restaurant was located a little outside of the center of Saigon, so in order to get there, my wife and I jumped in a taxi. The restaurant is only open starting in the afternoon until evening, and since I predicted it was going to be a busy type of dining environment, I decided to get there just as they opened, so they wouldn’t be too busy. We arrived to Bánh Canh Cua Trần Khắc Chân at about 3 pm, just an hour after they had opened for the day. Who eats at 3 pm? The answer is… lots and lots of people. When we arrived, the restaurant was already busy, there were just a few tables left, and luckily I managed to snag a table in the front on the sidewalk - I love the sidewalk environment… and it also makes for better light for food photos and food videos. As soon as arriving, my stomach began to growl, and I could hardly wait. In the front of the restaurant, within the glass cabinet was an attractive collection of crab and meats and quail eggs all on display and waiting to be dished out to hungry customers.
I ordered just their special, a bowl of Vietnamese banh canh cua. Banh canh is a type of Vietnamese noodle, made from both rice and tapioca flour. They are about the size of a Japanese udon noodles, thick and hearty, though the Vietnamese version is much more sticky and glutinous. The noodles were first placed into a bowl, then topped with a handful of boneless crab meat, a cube of blood, a crab meatball - which was in the shape of a crab itself, a shrimp, a quail egg, some slices of thin pork, and then finally a ladle of thick gravy, which made the sauce of this bowl of banh canh cua. Lastly, a sprinkle of green onions and a dash of pepper were added, and the bowl of goodness was delivered to my street food table - I couldn’t have been happier.
Before adding any condiments to my bowl of banh canh cua, I tasted the soup. It was thick and hearty, just as it looks, and had a beautiful crab flavor to it, not overpowering, but just soothing and comforting. The soup wasn’t too salty, nor spicy or sour. Instead it was just beautiful, with wonderful toppings and ingredients, and it was up to me to add extra condiments to make it the way I wanted it. I started with some lime juice to give it a sourness, and then proceeded to scoop on some chilies. Another delicious aspect of eating banh canh cua in Vietnam is that it’s served with sliced up Chinese donuts. And after watching everyone else dip a piece of Chinese donut into their noodle soup, I had to follow. Chinese donuts are not sweet, but they are instead fluffy and slightly salty, really light, and when I dipped it, it soaked up all that crab flavored gravy.
My banh canh cua at Bánh Canh Cua Trần Khắc Chân in Saigon, was not only a delicious bowl of noodles, but the restaurant has a wonderful atmosphere too - it’s really a great Saigon restaurant to try if you want to sample banh canh cua.

I don't get tired of the expressions on your face. Being Vietnamese myself, and the dishes you've taste so far, I can assure you are not exaggerating every time you take a bite out of any cuisine from around the world, because the food IS that HEAVENLY!! People might have a hard time believing you, because they've been missing out!

Hello from California, US. We eat this Ba'nh Canh soup A LOT when I was kid. My mom cook this soup when we get sick. Its very comfort foods. Can make with chicken, fish also. So easy to make Mark. LOVE that dish. Am home sick now.

Great video that makes me want the culinary train . Love you are still posting your trip in Vietnam. The Noodle, crab, and seafood stew was simply amazing. The stew made me want to dive into this plethora of yummy flavored. To experience the roller coaster of flavored would be heaven it's self. Love to try that when I can. It's - 6 C cold snow morning here in State and you made me really craving for this kind of soup. I think, people is luckier and happier to live surrounding by jungle of food stands in 24 hours.. Here is more like Mac Donald and subway food all year around, unless I move closer to NYC to have variety sausages. I'm glad you posted the address since this food stand looks good with all the foods. It's 10 minutes away from my house. I will definitely eat there since it looks de-li-cious.

the way people enjoy the food are different , but i extremely liike the way Mark responds to the food when he eats something, he's so sincere and appreciative, you can tell it on his face expression. Now it's ur turn, closes ur eyes, open your mouth , i will feed you some food , just imagining, you are eating the Vietnamese foods. How does it tastes, its good , isn't it ? So, what are u waiting for , let's book two tickets for you and your spouse heading for Vietnam spending a romantic vacation together at least for one month. you are working hard, you deseve it.

Hey Mark, amazing video and great food as usual. I was reading the comments and most of those I read where from American/Canadian citizens wishing they could have a trip to Asia and taste all of these marvelous dishes... I suggest to all of you to save some money, stop buying useless things and book a trip to an east-Asian country... You won't regret that.

Tapioca based noodles are good for those who go gluten free . . . my wife is allergic to shell fish, so I might try to make this soup with salmon meatballs instead of crab. It's 9;11 a.m. here in Peterborough, Ontario Canada . . .just had my first coffee but I could handle what you are eating. Your descriptions are top notch. Thanks, Bro.

I usually eat banh canh with a pork based soup with carrots, pumpkin, quail eggs amongst other things. It's not as thick and more soupy but I love it...had it yesterday and I'm still craving for it. I think there's different variations but the pork based soup is what I've grown up with. So another alternative for your wife :)

Salmon is quite fishy. I think closest and best alternative is ling fish but the base is still pork which will give you the most sweet and meaty flavour.

Thanks for this. Wish I knew about this place when I was in Saigon last year. What I found interesting while there is the Vietnamese eat literally all parts of animals, nothing goes unused. Sounds like you are pretty brave eating without always knowing LOL.
