We do! It's called the Extraordinary Form, and thanks to Pope Benedict XVI's Motu Proprio Summorum Pontificum it is being offered presently everywhere in the world. I offered a solemn high Requiem Mass for my mother's Funeral last year. By far the most beautiful Funeral of my twenty years in sacris. I recommend that you find a Solemn High Mass or a Missa Cantata and just go a be there, without doing much, just go and go through the motions like a baby at the breast without worrying too much about understanding everything to start. You will love it! And the understanding will come through the loving accompaniment. Be forewarned: understanding the Liturgy is very much akin to the way every man learns his native tongue--first in the flesh and then with the intellect! It's very much incarnational, as it should be!

Also before Pope Benedict XVI's Motu Proprio was possible to play Masses like this. Especially in German countries (Wien, Munchen, Bonn, Salzburg) was and is normal to take part at a Holy Mass with the music of Mozart, Haydn, Beethoven, Schubert. The lturgica reform of Vatican II never banned neither latin Mass nor classical liturgical music. If it does not happen so frequently even in other countries is only matter of lazines and bad taste of priests and congregations.
