I tried making vinegar but I must have done something wrong. Probably not enough sugars. But what I wanted to comment on is I always use white store-bought vinegar in place of fabric softener in the washing machine. We hate hate hate the perfume in dryer sheets and there is absolutely no odor from the vinegar. In fact, without it my bath towels begin to smell mildew-ie after one or two uses. Now I'm going to make some lemon vinegar to see if I can get a good lemon fragrance on my laundry.

I do have video recipes out there for biscuits, yeast bread, and even bread made from my own fermentation starter in replace of dry store bought yeast. I also have ones on cinnamon rolls and pumpkin bread along with the tortillas.

Thank you Heidi for everything you put on about dandelions!!! They just are just about our favorite thing to eat. Dandelion flowers in our eggs is a favorite. We have 118 outside right now ready to be picked and I think dandelion vinegar is what they will be for. I have noticed in several of your videos you mention you do not eat breakfast. I was wondering if you are doing intermittent fasting?

I am frugal almost to a fault. When beginning to make water kefir last summer, to get swing-top bottles, for less than buying brand new, I bought the bottled lemonade from Aldi that's imported from France and in swing-top bottles. At some point, while buying more bottles, they went on sale. So I paid $2 to $3 per bottle. Currently, they are $5+ per bottle on Amazon.

I’ve been so inspired by you that I’ve tried some experiments. The first was when I went out to collect rose petals, but the storms had blown them all off. So I tried making vinegar with the leaves instead. (This is a rugosa I’m going to cut back anyway.) So far so good! They’re still at the bubbly stage, so we’ll see how it ends up. The second was the sugar. I had a jar of brown rice syrup from 1998. And guess what? It worked great as the sugar in my starter, and in a citrus vinegar! I hate to throw anything away, so it was nice to get a good use for it. This has been so fun! Thanks for opening my eyes😁

I don't know why but I never get tired of your fermenting videos lol, btw I always have Kahm yeast growing in most of my ferments [vinegars/lactofermented veggies ...] and I want to know if there's something that I can do to avoid it, since I noticed that it makes my ferments have a funky off-taste which I'm not a fan of, My last batch had some on top and I can't enjoy it in my water anymore.

I never worry about my vinegar but I rarely have issues with my veggies but I also keep them in the fridge when they are done fermenting.

thank you so much for your teaching about the different uses of vinegars ..however i would like to add that some vinagar in your washing machine enhances the colors of your clothes ..the lavender giving an interesting scent to your bed sheets ….however no vinagar when washing clothes with elastic ….I also use some diluted vinagar in my dishwasher every time i wash dishes …💐

Yes, you can use dried herbs and yes the sugar ratio for size jar should be the same. The amount of herbs you add is up to you.

Yes, you can use distilled water and I do not dilute the vinegar in the spray bottle but I dilute it when using it as a hair wash by adding about a 1/4 or so do a small squirt bottle and then topping off with water before working through my hair. When shampooing my carpets, I add about a half cup or more to the tank of hot water on my machine.

Could you explain how you use your vinegar for your hair? Is it meant to substitute shampoo or use it after washing with shampoo? I have made varios vinegars, loquat citrus fruits, quince and more. I live in the mountains of Spain and have access to much fruit and herbs. Another question - why does my orange vinegar have a thick layer of a white substance on the bottom, plus what seems to be a scoby on top? They smell wonderful, not mildewy or fowl. This is great and I am on to making my vinegar now-first time I'm so excited. You mentioned that you filter your rain water. I am now collecting rain water (legal in CO up to 110 gal) and will have a collection system soon. Right now I just have a clean bucket with screening clipped to the top. I purchased a Britta pitcher filter for temporary filtering, but need something much more long lasting; how do you filter your rain water? I know there has to be a better way, like a charcoal filter, or something. Thanks again for everything.

@@src3360 I have no idea. The documents outlining how it can be collected stated something about rainwater being needed for city purposes, although how that impacts us in a suburb of Denver, I have no idea.

Rain Country Wow, I had no idea! 😬😬😬 I’m in Florida and have rain barrels to store rain in so I can water my gardens. It pours rain for a few months then dries out and having the rain barrels I don’t have to use the city water to water everything. So much for the land of the free 😩

You can add the sugar while it is still bubbly if you are wanting a stronger vinegar, I think that is actually the best time to do it :)

What if your pH is lower, say like around 2.0? And my 1/2 gallon jars have a lot of sentiment at the bottom, should I strain out some more of that? Also, all jars have what I thought was Cam yeast and it turned out to be a little more like scoby.

Once it is vinegar, it stays vinegar, it is not like a ferment that you want to keep alive. Standard ferments will turn to vinegar if not fed.

Hello Heidi.. Thank you for all the information.. When you mentioned Bread… I thought of a question… After you’ve made the bread how do you store it for the next day??? I know it sounds silly but for someone that’s never made bread before and wanting to learn once the bread cools off how do you store it to keep it from getting hard overnight … Thank you in advance.,, Blessings

We only cut slices of bread as needed then turn the bread cut side down on the cutting board and cover the loaf with a cloth

It needs to finish because it is likely only in the alcohol phase and needs that continued O2 exposure to turn to vinegar. Still a good idea to stir daily to help it along

Vinegar being a ferment does it magnify the attributes of that herb? Would it also have the probiotics? I have made carrot top vinegar, then infused carrot tops in that as a supplement.

Yes, vinegar does have probiotics, especially if you stop the process a little bit early while it is still fizzy.

Great video. I don't know PH tester can be in contact directly to the food that we consume. ph tester always looses it color into the liquid that i test.. maybe yours is food grade type.

I tried the liquid from my ferments and I make a lot of vinegar from scraps and herbs and the liquid from my ferments would not work as well for cleaning and other things I use vinegar for because most of my ferments have a lot of spices in them that I would not want in all the various things I use vinegar in, some maybe, like the homemade mayonnaise or salad dressings, or maybe the occasional batch of cheese

I really want to make the peach vinegar you mentioned. You also said not to use sugar when using fruit. So do i just put chunks of peaches in water? Is it also alright to use "spent" peaches?

I do not recall saying not to use sugar, sugar may be needed with some fruits and also depending on how much fruit you use. When using fruit scraps, low sugar fruits, or a low volume of fruit, it is best to add at least a 1/4 cup of sugar per half gallon jar to get a strong vinegar, otherwise your vinegar may turn out very weak. As far as the spent fruits, you can use them however you want but most of the fruit flavor will be gone from them and they will only taste like sour fiber. I find it best to feed the spent fruits to the chickens. It is all very good for them and it is not going to waist. If you do not have livestock to feed them to, then you can simply compost. This is what I did for years before we got our chickens

You can but it is important to understand that sugars with a high mineral content can often slow or stop a ferment. This includes dark brown sugar as it is high in molasses. I am not saying it will not work, just something to keep in mind

The Apple is Sage vinegar you made did you have to add sugar to that one as well or was the apples sweet enough

Yes, I added sugar, our apples are not real sweet apples but even if I use sweet apples, I usually still add a bit of sugar because that gives a more acidic vinegar

Can you use amber jugs and just chop up the apple peels really small if you don’t have jars with large openings? I have 11 32 ounces amber jars. I’ve never made vinegar but Thought I’d utilize the containers I have to save money but if necessary I’ll go buy jars with larger openings.

You can use any container but the problem with smaller opening is getting all the pieces out and cleaning them, so that is something to consider

Thank you! This maybe a silly question but since apples have a lot of sugar in them is it necessary to add raw sugar to it? I tried googling this but couldn’t find an answer and the sources I found didn’t emphasize using sugar so I wasn’t sure if I could get away with not using sugar.

I have a question about Aloe Vera - I am doing up a half gallon and i drained teh leaves of the yellow liquid before cutting it into chunks and adding sugar. its smelling really earthy rather than the alchool of the apples that i did last time. if it doesn't seem to be bubbling can i add more sugar again? i used about 1/4 cup.

How large was the jar and how long has it been going? When I am making herbal vinegars without fruit, I find it best to add 1/2 cup to 1/2 gallon. However, I have made vinegar blends with marshmallow and aloe and find they are a bit more sluggish in fermenting but they do bubble. The smell is different, as one can expect.

@@RainCountryHomestead Thank you for the quick reply. its in a 1 gallon container and I only fill it 3/4 with water and a good 4" of aloe. I had to use the leaves so it was the easiest thing I could think of. I will be doing some raison vinegar next. THank you!

If it stops bubbling around the two week mark, just leave it. If it does not start bubbling by day 4 or 5 it may mean there is already too much sugar. So adding sugar in either case is not a good idea

If it has a translucent look to it, it is just the mother and that means it is healthy

I have only used the common garden sage that I grow myself but one could use other varieties as well, it should not matter much

When using herbs to make vinegar, you MUST add sugar, it should even be added when using fruit scraps as there is usually not enough sugar in them to yield a high acidic vinegar. However, I no longer add more sugar part way through, only at the beginning.

You can use a dark bottle if you want, in fact dark is best if you keep it stored in a place where a lot of light can get to it

You need to be more specific on what you mean, when you say "stopped" do you mean stopped bubbling? By "a while ago", how long is that? I will say that if a vinegar stops bubbling, it usually means it still needs 2-3 more weeks before it is vinegar, still covered with a cloth or coffee filter. Adding sugar at that point will either stop or prolong the process

Heidi, thanks so much for all of your videos, learning so much. 5 weeks ago I started my first attempt at making vinegar. I used extra tangerines and oranges, I thought the process was complete so I strained the vinegar into clean jars. I’m not sure what is happening because the vinegar (liquid) has developed a new layer of the white substance on the top and also settled to the bottom of the jar. Can you tell me what’s going on, I was intending to use this batch for cleaning. Thank you 😊

That white substance is totally normal, it is either kham yeast or the mother forming (it will be rather gelatinous if it is the mother and somewhat powdery looking if it is yeast). Either way, it is to be expected and nothing to worry about :)

Ok, thanks I guess then what I’m wondering, do I let it ferment longer? Because I strained it twice and this is still forming. I’m not sure it will come through a spray nozzle. Also Heidi, I followed your video on how to make fruit fermented starter. it works great, used it so far on fermenting garlic and carrots 👍💕

No, you do not need to keep fermenting, most mothers form AFTER the fermentation process is complete. Though they typically form at the top so there should not be a problem with it clogging a spray nozzle, I have never had issues with it myself.

Can you add apple instead of sugar to make vinegar? We have many apple trees on our property, more than we use and give to friends. It would be cheaper for us to use apple instead of sugar we would need to buy. We also have many hawthorn trees on our property that we make into an extract for my husband. He had a major heart attack in 2017 and the doctors wanted to do bypass surgery. I am excited to try making homemade vinegar and using to make the hawthorn extract. Have you ever made hawthorn extract?

If you are using straight apple juice, then there is no need to add sugar but while you can add apple peels, cores and so on to your vinegars, or make them just from apple peels and cores, you would still need to add at least 1/4 of sugar. The sugar is what gets converted into vinegar. Once it is vinegar, it is no longer sugar and not a concern if you are worried about it for dietary reasons.

See...I KNEW I would forget to answer something important in this video! haha! No, the vinegars I am working through I keep in spray bottles or the swing top bottles and keep them in a cabinet. The rest stay stored in the half gallon jars in a cabinet in our pantry room

I’m making raisin vinegar. The bubbling process has slowed and almost stopped however it has only been 16 days, it smells yeasty/alcoholic and not yet like vinegar. What should I do? The past 2 weeks it has been quite active and I stir it twice a day.

It is right where it should be for the time frame. The first two weeks the sugar is converting to alcohol, that is when you see all the bubbles. When it stops bubbling (around the two week mark) then it needs two more weeks to convert the alcohol to acetic acid. So just leave it be and let it do its thing

Sadly, no it will not. You cannot boil it out either, it will only become more condensed. The only way to remove it is through either reverse osmosis or getting a special fluoride filter that attaches to your other filter as seen here: amzn.to/2m3o5HN

We just get the basic filters as they are much cheaper to buy in a four pack and filter our rain water. No need for the expensive fluoride filter that way

I strained tomato vinegar today after 4 weeks but it still has a hard cider smell to it. Its cloudy still too. Can I just cover w cloth as is to continue the vinegar process or do I need to completely add to it again?

Homemade vinegar is typically cloudy. While some of this will clear as the sediments settle to the bottom, that is totally normal. Yes, just cover and allow it to finish, if you add anything, you will be starting all over

Think you need a railed wheeled cart you can move your stirring vinegars on and move into laundry room during day and in front of counter at night as a reminder to quickly stir first thing in morning..

Good idea but I do have them set up on a table in my work room and I go through there every day (several times a day) and I see them and am reminded to stir them. It has been working great :)

Usually any of my floral or other herbal vinegars but if I run out of those I will use whatever fruit vinegar I have on hand. My current favorite for my hair is rosemary and nasturtium

I'm worried! I put orange peels, etc into the jar and added bottled Arrowhead spring water and 1/3rd cup of C&H pure cane sugar, covering it with a cotton handkerchief. The next day it was slightly but noticeably bubbling, so I added another 1/3rd cup sugar. now for the past 4 days, it isn't bubbling! Is it ok or have I ruined it :-( Weel, it is bubbling tiny bubbles but not much...

It may not be ruined but that is a lot of sugar to add so close together.Too much sugar can prevent a ferment or bring it to a halt. Even when I was experimenting adding sugar partway through the cycle, I found the best time was after it had been bubbling for several days. I do not bother doing that though, I just add only up to a half cup on the first day and that is it..

O yes, I sure think so. I wanted to do that but since I have not been able to get quite as many flowers as I would like for that and had an orange to use up anyway, I decided to make dandelion citrus. I do like making blends anyway. I just strained it out yesterday and it turned out wonderful!

I have been thinking about making dandelion vinegar. I am in an extreme winter area and was wondering if it would help as an anti bacterial anti viral drink to take shots of . we moved Herr 2 years ago and have been sickly both winters now. do you think I could just infuse or steep store bought acv with dandelions and store it? I'm new to all this herbal stuff but want to start making a stockpile for this winter

We also live in an extreme winter area and we have found making elderberry syrup taken daily to be a very real help with our immune systems. We add garlic, cinnamon and raw honey to it. Hope this helps.

Yes, though I have never seen them. Even so, I do not think it is something to be concerned about, they are harmless. Simply strain them out when the vinegar is done

Yep, I am so crazy that I even found the scientific studies on the detriment of fluoride on the United States National Library of Medicine, as well as other research based sites such as Harvard University and others. What is truly crazy is people calling someone crazy for looking into the ACTUAL science on this matter rather than taking the time to question what they are being told by those who have money to make off selling them a toxic product.

@@RainCountryHomestead Fluoride is a natural mineral that is in the earth and in ground water. Most city water is purified using reverse osmosis and adding some back in is beneficial. Not only that, but fluoride is also everywhere from the foods you eat to the air you breathe.

Because I do not have grape leaves all year round unless I decide to freeze them. My grapes leaves are only just now getting big enough to start using on top of the vinegars

As long as you cover with a cloth or coffee filter to keep dirt and bugs out. If you do not stir daily, it will likely develop mold on top but I used to never worry about that, I would simply lift it off once it was finished and then strain it. I am just really liking the stirring daily, it seems to make a stronger and better tasting vinegar over all

Please ladle out some of that vinegar and insert your pH test strip in that to test instead of contaminating your vinegar with the chemicals on the pH test strip. I used to have my own aquaria business where I installed and maintained fish tanks for homes and businesses and I would do pH tests on the water to ensure good water quality on my tanks. You are not supposed to put the test strip directly into the tank water.
