Elderberry syrup
1 cup dried elderberries
4 cups water
2 cinnamon sticks
6 whole cloves
6 cardamon
2 thick slices of orange
3 slices lemon
1 star anise
I cup of raw honey
Method
Put all ingredients into a saucepan except the raw honey. Bring to a boil then reduce heat and let simmer for 45 mins or until mixture has reduced by half. Mash the berries with a potato masher and leave to cool. Once cool strain the mixture through a cheese cloth pressing down using a spoon or ladle to squeeze as much liquid out. Discard the squeezed berry mixture. Add the raw honey and stir to combine throughly. This fills a quart jar for me. Keep refrigerated for upto 6 months to a year.
