Ate Jeng, hindi po kailangan i-smooth masyado ang dough. As long as the ingredients get together goods na! The pieces of butter is that makes it crispy. Also less handling of the flour will not activate the gluten. Need more din po i-pasok sa ref to rest and harden a bit specially mainit po diyan sa Pinas. Pag ma-lumpy na yong dough…. i-pasok muna sa ref for easy handling…. The warm weather and the warmth of your hand melts the butter kaya lumalambot…. Ang solusyon nga, i-ref muna! Ref muna din after forming the empanada and before frying! Kelangan po cold, cold, cold! Use ice cold water and very cold butter (not room temp or softened). Good luck!
Ate Jeng, I love to make empanada… it’s very versatile. Once you find the right dough… there’s a recipe for frying and a recipe for baking (yun yata me butter ang for frying and oil for baking) in your recipe parang puede i-bake or fry. You can make empanada for breakfast with filling of ham and eggs (scrambled); lunch with adobo and rice?; merienda like the one you did! And dessert with sweetened banana, halaya, even leche flan?…. Like I always say…. You are only limited by your imagination!
