Chicken and Rice Sti-Fry recipele
Recipe by Cooking with Zanele page 75 Senidliwe Kodwa
serves 3-4 people
2 Chicken breast fillets, cut into strips
1 Tbsp chicken spice
2 Tbsp oil
1 onion, chopped
250g stir-fry vegetables (any kind will do)
1/4 cup soy sauce
2 cups cooked long-grain white or brown rice
1 Tbsp spice for rice
Salt and pepper to taste
Season the chicken with chicken spice and set aside
In a pan, heat the oil over medium heat.
Add the onion and fry until softened.
Add the seasoned chicken strips, and fry for 3 minutes, or until browned.
Stir through the stir-fry vegetables, soy sauce, rice and spice for rice.
Mix well, season with salt and pepper, and cook for a further 4-6 minutes before serving.
