Mama Taylor i can definitely relate to you not being all the way in the holiday spirit, this is my first year without my mom for the holidays also and yes maam i can tell you its very hard to not have her physically here with me my siblings and my family. I normally use chicken thighs and boil them down, take the meat off the bone and use the broth for the dressing but yea I think you would still get the same or similar result if you use the Cornish hen . 😊👌🏼
