Jollof rice tips boil one or two pieces chicken and use that as chicken stock to cook your rice in you can also use beef or fish for fish search for Senegambian Jollof recipes (Thieboudienne) The blended tomato and peppers need to cook in the onions etc before adding the rice Scotch Bonnet peppers are a must for Jollof it makes a huge difference in the taste you notice if a person doesn't use it if you dont like spicy food don't blend the scotch bonnet with the tomatoes instead add it whole in the pot uncooked you still get the flavour minus the heat.
