Voodoo Wings
Something magical happens to these grilled wings when you toss them in this sweet and spicy Voodoo Sauce - Cajun and Caribbean flavors collide producing a tantalizing sweet & spicy flavor with notes of brown butter and vanilla.
For this cook I’m running my trusty 22” Weber kettle set up with a charcoal Vortex. You simply can’t beat the way the Vortex cooks chicken wings. The skin browns and turns crispy on both sides; you can actually see the fat rendering away on the skin. I add 1 small piece of peach wood directly over the vortex for smoke.
To set up the grill: Get a chimney of Royal Oak briquettes going using a couple tumble weed fire starters. Place the Vortex on the bottom fire grate in the weber and pour in the hot coals. Set the cooking grate in place and give it just a few minutes to get hot. The dial on the Weber will climb rapidly to around 550 degrees. (don’t panic this isn’t the actual grate temp)
Place the wings on a sheet pan and pat dry with paper towel. You want to get as much moisture off as possible, so the skin will crisp. I’m using whole wings for this recipe but you could cut them up into individual pieces or buy party wings.
To get the Cajun flavor party started I hit the wings with a good coat of my King Craw Seasoning. It’s a little on the spicy side but not hot enough to blow your head off and the salt is balanced so you don’t have to worry about over doing it with this one. You can substitute your favorite cajun seasoning just watch the salt content.
Arrange the wings on the outer edge of the cooking grate away from the vortex. The heat will roll down the top and cook the wings. Start out with the exhaust vent in the 12 o’clock position and turn the lid 45 degrees every 15 minutes. This helps the heat flow evenly around all the wings. After 30 minutes flip the wings and continue cooking. While the wings are on the grill go ahead and make the Voodoo sauce.
VooDoo Wing Sauce
1 stick Butter
2 Tablespoons minced onion
2 cloves minced garlic
1/2 cup dark brown sugar
2oz dark rum
2oz Killer Hogs Hot Sauce
1 teaspoon Crushed Red Pepper
1 cup Killer Hogs Vinegar Sauce
Melt butter in a sauce pan over medium heat. Add onion and garlic and cook for 2-3 minutes. Add dark brown sugar, red pepper flakes, and rum. Reduce for 5-7 minutes to cook off alcohol. Remove from heat and add Hot Sauce and Vinegar Sauce. Store in a jar until ready to use.
Get the wings off the grill when they hit 190-195 internal; I use a Thermoworks Thermapen to check the internal temperature.
I know that wings are done at 165 internal; but trust me the skin is better, the fat is completely rendered, and the bones come out clean when you take them to 190.
Place 4-5 wings in a large bowl and pour in a little of the Voodoo sauce. Toss the wings until they’re completely coated and pour out onto a platter or cutting board. Repeat this step until all the wings are sauced. I like to serve them with a kicked up Cajun ranch dipping sauce and sticks of celery or carrots.
Voodoo Ranch Dip
1 cup Blue Plate Mayo
1 cup Sour Cream
1 packet Ranch seasoning
1 Tablespoon Killer Hogs Hot Sauce
1 teaspoon Malcom’s King Craw Cajun Seasoning
1 pinch Cayenne Pepper (more if you like it spicy!)
Combine ingredients in a small bowl and cover. Refrigerate for at least 3 hrs before serving.

Hands down the best wing sauce I’ve ever had. Thanks for the videos! Love how you always tell people to use whatever seasonings they want vs trying to push your brand seasonings. That definitely sells me on buying YOUR brand sauces alone but not too mention your sauces and seasonings are awesome!

Sitting on my deck with a home brew and these wings are on my Weber right now. Malcolm Reed is my new best friend.....unless he ever needs help moving to a new house. In that case I don’t know the guy. But seriously.... the smell from my grill smells like that smell that’s in the air in New Orleans when you’re just out walking around. The GOOD smell.... not the smells you get on bourbon st on a hot summer day....but that crazy good smell that comes from all the cooking going on all over NOLA that creates that crazy good smell. Any of you who have been there know what I mean. Thanks, Malcolm! Great recipe!!

i've done the sauce recipe on both wings, and another dish I made. the sauce is a hit. With or without a grill used. However, I have no idea where to obtain peach smoked wood :/ So I use apple or Cherry as a alternative until I can find the peach. But if anyone does do the sauce recipe here, I have to admit... The ranch is HONESTLY not optional. It's a must, believe me.

Garrett Jones it gives you a very high yet indirect heat. The way the heat rolls around the kettle gives you better skin and a quicker cook. Works great on jalapeño poppers as well!

I don’t get it - I tried some wings on a Weber w/a vortex. Flipped them at 30 minutes , kept them on another 30 min , and when I pulled them , they were burnt like Clark Griswold’s turkey. Was in Houston, over 90 degrees…. What am I missing ?!?

My dads ex wife is from Jamaica and her family made rum cake for the wedding. They used so much rum all it tasted like was rum lol. They also put raisins that they soaked in rum in there too. All while drinking overproof white rum.

Bought my weber kettle today and looking forward to tackling this on the weekend!! awesome vid as always *** UPDATE !! *** DID THIS today and absolutely awesome. I followed a Cajun recipe for some and the BBQ flavour for the rest. The kettle/vortex system is amazing - the best wings I've ever had. Used your other video about buying/prepping full size wings into drums/flats and it was a great family meal. Thank you Malcolm - a great channel that I truly appreciate and love to watch.

I always season my wings (Plowboys Yardbird) and let them rest uncovered in the fridge overnight. Chicken around here has so little flavor that that rub has to have time to penetrate the meat. Fantastic video as always!

This is an absolutely amazing recipe. I tried it for the first time because my wife loves chicken wings. Crispy on the outside and fall off the bones on the inside as you said! As soon as I was done my wife said "Wow, that looks like it came from a restaurant!" Her next comment was "Let's eat now!" Thank you very much for the instructions on this one!

Tried making these on a ceramic cooker at 450° with the vortex , they got to over 200° within 30 minutes. Not enough time to Krisp up the skin .

I just made a big batch of wings last night in the air fryer. Too cold and snowy in Colorado to mess with my smoker on my porch. I just chop up the whole wings, season with Rendezvous Seasoning and air fry till done. I make a sauce with BBQ sauce, Habanero hot sauce,Franks and butter, dunk the done wings, and run them under the broiler to get more crisp. Excellent.

I don’t know what I’m doing wrong, but I cannot get crispy skin on wings at all. I’ve ruined too many wings on my Weber kettle with the vortex. I did just like you and ran the internal temp up to 192 and the skin is still rubber. I’ve used lump for more heat and still get rubber skin. I have no idea why.

Hey Malcom I am doing this one right now. But this time I am using a little of your corn starch wing test . I figure to put some rub on first and then corn starch. But also I am putting some rub in the corn starch as well. I will let you know if this mod of your recipe works. Cuz I know you love vortex wings.

Prior to using the Vortex or a pair of coal baskets in your Kettle, make absolutely sure the inside of your lid is perfectly clean, otherwise you'll have all of those black burnt bits raining down on your food.
