Eel!

It's a European amphibian - like our North American siren. It's not an eel. Notice the front legs? In these snake-shaped amphibians, the hind legs are vestigal and very small.

It is a black Eel, When small/young they are referred to as Glass Eals. They are migratory Eals and travel from the Sargasso Sea (Northern West Atlantic) back to the canals in The Netherlands and other countries. Another name is North American Eal. I fished for these all my growing up years in Holland. We would catch them on worm hooked bamboo poles and then once home Fresh them by placing them in a bathtub in garage with fresh streaming fosset water for 3-5 days. This cleans out the mud taste and then we would clean them and eat them. The one being eaten here is a very large mature one. We eat them fried, smoked, etc. They are very good to eat.
