If you don't have a juicer, you can toss the celery in a blender and pretty much liquefy it. Pour the juice through a fine mesh sieve or coffee filter lined funnel.

All I know is if I was Is Nick's parents I would be very proud of him. He really makes cooking fun and really teaches you more than a recipe along the way.
Looks great, but why not make real natural sauerkraut in stead of that vinegared facsimile? You can start it at the same time as curing the meat and they will be ready at the same time. Slice it up as you did here, then give it a bit of a hand mashing, then cover it with water, seal it up and let it ferment for five or six days. It creates its own vinegar - and it is not cooked. And it is easier to make. It has a deeper earthier flavor and keeps in the fridge for weeks... or you can leave it on the counter and it will get stronger and stronger for a couple of months.

I’m absolutely blown away and inspired by this video. Just a couple things to make it even healthier: 1. Use avocado oil instead of vegetable oil (veg oil is inflammatory in your arteries); 2. Buy a mill grinder and whole wheat berries and grind your own flour- far more nutritious than store bought

Sauerkraut is fermented, so I wouldn’t say your boiled onion and cabbage aged for a few hours is better than the actual fermented stuff you can get at a store
