Keyboard and mouse, but many of my controls are rebound. I use W/S for throttle, capslock/shift for pitch, q/e for yaw, a/d for roll, f/v for flaps up/down, 3 for airbrake, and a couple more useless things. It's important to have these controls bound but I would not recommend using the exact same scheme as me-the whole capslock thing can be annoying.
1. Ensure that you are isolated enough so that you wont die to a different enemy as soon as you force the first person to overshoot. 2. Dodge everything you can-make sure you make use of all of the pitch/roll/yaw controls on your keyboard and position your plane in a way that you cannot be hit. 3. As they are overshooting determine how much energy they have compared to you and plan your attack accordingly (Don't follow someone in a vertical spiral if they have 400 kph on you). It isn't easy at first but with practice it becomes more and more natural.
