To be very clear to those who are curious- real wasabi isn't in the same galaxy as fake wasabi, or horseradish (which is the cheap crap you get in bog standard sushi restaurants). Real wasabi is much more mild (and creamy as Shizuka said), and really is a special, unique taste.

I’ve had it a few times and you are absolutely correct, it’s almost herbal.

I really don't think that wasabi is an amazing food but I admit that sometimes is interesting and strangely refreshing... Shizuka looks like a penguin in rubber boots and rain jacket and that's not depreciative, penguins are very cute and fluffy! 🐧🐧🐧🐧😄😄

I knew wasabi is very finicky to cultivate, so I really like that JBF has shed light on it for others to know! Sadly true wasabi in North America is hard to find for home cooking without exorbitant pricing. I never knew about the wasabi sake drink! Seems like a life hack lmao! I never thought it was a thing just like you did Shizzy haha

You haven’t lived until you have had わさびの葉の天ぷら - like spicy potato chips. Actually grown in a lot of places, but not in these ancient terraces in creeks - that is special - there are artificial covered terraces in place north like Aomori-ken. Curiously if you look at the leaves and the kanji it is a Malvaceae, real reason it considered a Brassicaceae is 1) it has four petaled flowers and 2) because it basically doesn’t grow natively outside Japan and tastes like Horseradish and the botanists only had dried out bits. FYI: Not only clean mineral water BUT ALSO needs to be moving/oxygenated water or else the ammonia rots the plant.

I have to say, after experiencing the difference between freshly ground wasabi and the toxic paste that you get at your local shopping centre grade sushi joint, the fresh stuff beats it every day of the week, I was actually able to eat it on its on without feeling like I’d been assaulted in the sinuses……..🤣🤣🤣🤣
