🤔😍I do the same with my carrots both ways...a peeler (when I use the peeler I run the peeler up and down the carrot to remove the skin and use the peels to my "stock") and a plastic scrubber...I hand slice my veggies with a very cleanly sharpened blade because a dull blade is a dangerous blade...yes, a mandoline is nice to use but am careful with my knife skills since I find this very therapeutic (I have the time with sticking my pantry) 😉👍🏻

Pints are 10 minutes, my jars are pint and a half so I processed them for 15 minutes quart times. Shelf life for my environment is a long time we've eaten all within 5 years so haven't had any past that time.

@@stacyshomestead I JUST WATER CANNED 5 CARROT / JALAPENOS :) 3 C WATER CANNED POTATOES :) ALL IN 32 OZ JARS FOR 25 TO 30 MINUTES EACH :) IS THAT OK :)

@@Michnikats2im sorry for the late reply I was out of town. You need to pressure can potatoes it is a low acid food.
