Watermelon syrup is easy to make - however, oddly enough, it doesn't actually taste like watermelon. It tastes like a cross between Papaya and Sapote (both of which are delicious)! Use this in cocktails, cakes, and whatever else you would use a syrup in.

INGREDIENTS:
- 1/4 to 1/2 a watermelon
HARDWARE
- large bowl
- fine sift, such as chinois strainer or cheese cloth
- blender/food processor
- cheese cloth
- coffee filter
DIRECTIONS
1. Cut the red flesh from the watermelon.
2. Cut the red flesh into smaller pieces, about 1 inch by 1 inch cubes.
3. Place the red stuff into a blender and pulse to create a pulp.
4. Sift the juice into a large bowl using the chinois strainer (or any strainer you have).
5. Then resift the juice into a pot.
6. Place the pot onto the stove top and bring to a simmer. Stir very little - the pulp will begin to separate.
7. Place the cheese cloth into the chinois strainer and clip it into place if you're afraid of it sliding.
8. Once the juice has reduced some and it looks as if you have a muck pond on top, pour it through the cheese cloth/strainer combo into a bowl.
9. Then, pour the sifted juice back into the pot and place back onto the stove top.
10. Continue simmering the syrup until it is about 1/4 of the volume it was when you started. Where you decide to stop is personal preference - if you want a thicker syrup, continue cooking!
11. Remove from the heat and let cool.
12. Pour through a coffee filter into a vessel in order to remove the last bit of fibrous material.
13. Then pour into a glass bottle for storage.
14. Enjoy!

You could try the Korean cheong method to get a lot of watermelon flavor. It's just mixing equal parts sugar and watermelon by weight and waiting a few days. Strain out the solids and you have a delicious syrup.

Looks yummy, and I'm surprised by the way the taste changes. Reminds of the time I made $2 worth of apple sauce using $4 worth of granny smith apples, and it only took me 3 hours.

That's funny. That happened to me recently... Spent $16 worth of ingredients and two hours to makes something that was inedible 😅

just subscribed. Came here on your Sous Vide eggs video. I spent several years (off and on) getting watermelon syrup down. First, seedless watermelons were a quick no simply because the flavor of watermelon is more “watermelony” on seeded melons. The suck part is, you still have to remove the seeds because they have a stronger flavor than the actual watermelon. Toast em, they have a nutty taste and go great on a wilted romain salad with dried cranberries. Anyway, the next hurdle for me was chemistry. Syrup is 14% to 18% sugar and watermelon is about 6% and the flavor compounds are volatile. So, I had to reduce the liquid content by 2/3rds without killing the flavor. Even on the lowest settings my stove was too hot and the oven sauna was a no go because condensation dripped back into the pan. My best success was actually a double boiler stirring while binge watching Stranger Things. I did a cheat once adding sugar into blended juice to push the time back, but it weakened the flavor and my watermelon margaritas deserve to taste like watermelons. Keep up the great vids, I know you will blow up soon.

I appreciate you watching and subscribing! Regarding the melon syrup - I discussed the same difficulties we both had with a friend of mine who is much more knowledgeable with chemistry, especially food chemistry. He said it's super difficult not to trigger the mailard reaction with simple sugars. I think the ideal process would be to trigger evaporation (like, leaving out in the sun), but in a controlled environment and at a rapid rate, which... Would be super difficult without a chem lab (as far as I know, lol)

I'm subscribing on the merit of this discussion alone. I'm exploring candy now after decades on line in restaurants with adult ingredients, and chemistry factors heavily. Thank you for the excellent work and especially your approach. Form and function. Brilliant.

why not use the sugar dusting method. i think it must use capillary action to remove the juice. but I'm not sure if i could call it a syrup

Wow! Interesting, I’ve never heard of Watermelon Syrup before. I’m going to give it a try. Carbs??? Think I will try it in sparkling water just for a hint of flavor and sweetness. Hope I like it, I’ve never been fond of Papaya....tastes perfumey like Cilantro tastes like old dishwater smells. 😜

There's quite a bit of sugar in watermelon juice - by reducing it, we concentrate those sugars!

Oh, now. when I finished through the video, I got that yours smells oddly too
@BlackTieKitchen
@BlackTieKitchen 5 лет назад
Tastes different too. I think I didnt get much of the pumpkin smell because I removed a lot of the pulp. Although, when I tasted the pulp that seperated as it simmered, that did have a flavor resemblance to pumpkin. The whole experience was weird - complete opposite of everything I expected lol

@BlackTieKitchen
@BlackTieKitchen 4 года назад
I'm not sure how long it will last in the fridge. Plain simple syrup can last me for a while, but this is a little bit more than just sugar water. My last batch was good for at least two months, but I'm not a food scientist, so I cant say for sure about its expiration date

Do you happen to know the calorie content?
@BlackTieKitchen
@BlackTieKitchen 4 года назад
Unfortunately, I do not. Since it's basically a reduction, I would likely have to send it out to a food lab to have it analyzed and I don't have the funds for that :/
