They hire stunt actors, most of these actors have previously done stunts for TV shows and movies. They might make you sign up for the union, especially if you wanted to do something more with Universal like stunts for shows or movies.
AWAREDIAGRAM 680 I actually looked it up awhile back. They cast most (excluding the leads usually) from a business known as Action Horizons. They do open casting if you know gymnastics, stage combat etc. You also don’t need to be in SAG or Equity so no union is required!
did you watch the video? She explained it t 2:29. It's on a catapult system similar to an aircraft carrier. What isn't mentioned is it only launches when the conditions are right (not too windy) which is controlled by a computer and measured by air sensors.
