We eat some delicious bánh xèo (Vietnamese flour pancake) and gỏi cuốn (Vietnamese spring roll) at a restaurant tucked away in District 1, Saigon, Vietnam. This is one of the restaurants that Anthony Bourdain ate at!

Banh xeo is commonly referred to as a Vietnamese pancake or crepe. It is made with a layer of thin flour that is fried and then topped with shrimp, pork, bean sprouts, and mung beans. You can find bánh xèo with other various toppings as well. The banh xeo is also served alongside various rau (vegetables) which include both herbs and lettuce that you use to wrap the banh xeo into rolls. You can then dip the banh xeo into various sauces, but most commonly into fish sauce (nuoc mam).
Goi cuon is a spring roll. It is lettuce, rice noodles, shrimp, and pork, all wrapped in rice paper and served in a roll. This roll is dipped into a variety of sauces which include mam nem, nuoc mam, and thong den (hoisin sauce).
