Meen Kozhambu:
Mackerel - 500 g
Peanut Oil - ½ Cup
Fenugreek - ¾ tsp
Green Chilli - 2 nos
Curry Leaves - 2 Sprigs
Shallots - 150 g
Garlic - 6 Cloves
Tomato - 1 large
Turmeric Powder - ½ tsp
Chilli Powder - 1 tsp
Coriander Powder - 1 tsp
Tamarind - 50 g
Jaggery - ½ tsp
Prawn Fry:
Prawns - 400 g
Ginger garlic paste - 1 tbsp
Turmeric Powder - ¼ tsp
Red Chilli Powder - ½ tsp
Salt - ½ tsp
Black Pepper - 1 tsp
Curry Leaves - 1 sprig
Peanut Oil - 3 tbsp
Onion(finely chopped) - 1 no
Tomato - 1 no
Red Chilli - ½ tsp + ½ tsp
Coriander Powder - 1 tsp
Cumin Powder - ½ tsp
Fish Tawa Fry:
King Fish Steaks - 300 g
Turmeric Powder - ¼ tsp
Red Chilli Powder - ¾ tsp
Salt - ½ tsp
Lemon Juice - ½ no
Ginger garlic paste - 1 tsp
Corn Starch - 2 tbsp
Instructions:
Meen Kozhambu
1.Soak the tamarind in hot water for 20 minutes and extract the pulp
2.Blend the shallots and tomato into a fine paste and set it aside
3.In a kadhai add peanut oil and add mustard seeds and let it splutter, add fenugreek seeds, curry leaves and green chillies and let it cook for 10 seconds
4.Add the shallot and tomato paste along with the spices and cook for 10 minutes or until the raw smell disappears
5.Pour water and add the tamarind pulp and cook covered for 10 minutes
6.Add the mackerel and let it simmer for 5 minutes or until tender
Prawn Thokku
1.Marinate the prawns with turmeric, chilli powder, ginger garlic paste, curry leaves and salt for 30 minutes
2.In a pan pour peanut oil and add the marinated prawn and saute for 2 minutes and set it aside.
3.In the same pan add some more oil and saute finely chopped onion, once well cooked add the fine chopped tomatoes and saute until they turn mushy.
4.Add the ground masalas and cook until the raw smell disappears
5.Add back the sauteed prawn and cook for additional 5 minutes and set aside
Vanjaram Fish Fry
1.In a mixing bowl add the fish steaks and add all the ingredients and marinate for 30 minutes
2.In a tawa add peanut oil and shallow fry the fish until golden and crispy around 3 minutes on each side
