Hello everyone! Well the time has come to start working on the pole barn FINALLY! We got our load of wood delivered and now we are starting to TEAR IT DOWN! We are super excited to start working on Roxane's new Pantry / Canning room. Tank you all for being here, we appreciate you all! Enjoy!

When storing canned goods they need to be in a dark cool place. Everything will keep much longer.

A pantry and canning room will need to be dark because heat an sunshine will cause moisture lose or spoiled food. So at least half should be no sun light.

Hi Ant and Rox!! I think your idea for Roxy's Pantry is a great idea!! I just wanted to remind you that the more windows you have, the more heat and cool loss you have. There's a reason why cellars had no windows and were underground. Steady temps keep your goods usable for much longer. Also, windows mean less shelf space, which I believe is the main reason for the project build. Good luck with your project and remember you have loyal supporters our here that want you to succeed in your endeavors!!!!

Okay about peaches. Blanching works when peaches are ripe. Also stone free peaches work better for the jams and canned peaches.

@@idarmartin6022more commonly known as “free stone” peaches. Meaning they release from the stone when cut in half. Other peaches are called clings. They cling to the pits.

Consider window placing carefully - food storage does better in darker conditions without direct sunlight. 😊

I agree with Anthony about the window(s). Put one or 2 on the wall where the door will be. Canned goods need a darker place. Too much sunlight can cause spoilage.

On top of the Food Storage room I would add Solar panels so that it's off grid for your emergency food. A generator will only last if you can get gas.

Since you are going to use it for storing your canning you might want to keep if from getting light from outside. The darker the space the better it will keep.

Yeah - check out what YT Channel Sow the Land has done with his water catchment - it's amazing how much water he's able to get off the roof of his existing structures and the new ones he's built to capture/hold water for the gardens, animals, etc.

I have a 12x24 shed that I use as for canning and pantry. I put black out curtains over my shelves to keep out light. It works out great.

We put an X on the bottom. Put them in boiling water to blanche them. Transfered the peaches to ice water. Where the X was, the skin lifted up, and it was easy to grab a piece of the skin with a paring knife and remove a section. It worked well.

I would dig a big square hole under ground. Concret it all. For steffys canned food. It will stay cool under ground. You could use it for storms too.

I would definitely put in a stove and sink so you can can and process meat out there without doing it inside! Great idea for a pantry!!

Hey, with the peaches, first off, Southern peaches have soft skin so you can Blanche in hot and peel very nicely in cold water. These peaches were from out west, they also were “cling stone” meaning that the seed stuck to the “meat”. Southern peaches come in during the last of May and during June. They are grown in GA, AL, TN, LA, maybe KY. The ones that come in later are called cling stone, as well. These are the ones that can be made into pickled peaches. This too may be a Southern thing. Arkansas is on the border of being Southern and midwestern. I hope this does not confuse you concerning peaches. I just want to help you learn more about the South because you almost live there. Consider a stove and sink to actually do your canning out there and keep your house cooler. All the mess will be outside!! Make it seperate room with windows. God bless Kathy

I have found that you have to score them on the bottom and then put them boiling water for 3 minutes. Then put the peaches in your ice bath. They will then peel right off. Love y’all and watch all your videos!

Have you made peach pit jelly? Soak your good peelings and peach pits in water at least overnight in the refrigerator. Then use the juice to make jelly.

Easy peach peeling for jam I make an x and dump them in boiling water for 3-5 minutes after put in cold water the peel comes right off😊

Ideals, the wall between storage and tool room. Put the fridge abd freezers lined together. Huge island for prep table. The cook stove should be close to the door, tilt out windows for air glow when cooking in there. Put 2 ceiling fans in there, 1 wall all shelves 1 inches taller then canning jars. Put all canners and pressure banners under the island. Add a sink on the island.

My pantries are all in-house. But if I could choose I’d build it in a basement. But since that’s not a viable suggestion I’d say keep it practical and simple for what its use is for. Storing canned goods need cool and dark conditions to maintain low temperatures. I’d build storage shelves on the walls furthest from the sun/heat. Also, remember that freezers and refrigerators generate a lot of heat. If you could keep them separated it’d be less to worry about. I’d probably skip the windows since you’re really not going to spend a lot of time in there. There are so many RU-vidrs with great pantries and pantry ideas! They’re definitely more educated to give advice on building a pantry than I am. But I CAN’T WAIT TO SEE YOU BUILD IT! I’m here for it!!! ❤️❤️❤️

make sure to insulate the walls and vent the roof. Maybe build some can goods racks that are raised in the back with dividers. Have it load cans in the back and pull from the front. You will always use the oldest cans first, which will help your can goods (beans, soups, etc.) stay fresh as possible.

the best peaches for canning i have found are called free stone, score the bottom and blanch until you can see the skin curl. then put in cold lemon water., slice and then the pit comes clean from the fruit

Roxanne after using you peach for jam you can take the pits and peels to make peach jelly. My sister and I always try to use as much of the produce as possible.

Hi guys. I get you would like windows but as a lot of people were saying you have to think of heat and cooling but you could treat the space as two halves, one half a prep/ cook area and put windows in that area and make the other half a black out space just for your finished produce, it would be the same as a root cellar only above ground. You could call your new space 'The Cantry', cross between pantry and canning. Can't wait to see it all come together.

Food is best preserved in the dark. The more windows you have, the less shelf space you have to store food. It cuts into the walls.

Put the chest freezers in the middle as to not take up wall space and you can also use them to sit things on when you walk in. For canned goods darker is better plus more shelving if you don't have any windows. I'm excited to see it when you are done, I am sure it will be great!

I score them down the sides before blanching then ..4 sections ..it does help skin come off easier.

Rox my mom and I saved the peeling and she made some peach jelly with the meat that was left on the peelings and it turned out really good

Jam looked great Rox, we made peach/vanilla jam and peach/ginger jam last year. Try scoring the skins with an X before blanching, they peel much easier. Good luck

I grew up on a homestead in Arkansas. We just peeled them and then made jelly with the peelings. we cooked the peelings and made the jelly with the juice. Of course we made jam, canned, or made pies with the peak meat.

Also, you can freeze peaches whole. Once frozen, run under water, and the peel slips off easy peesy.

I think I would have added the 10x10 addition to the front, and keep the tool storage area as a 10x20. That way you get 2 storage areas of the same size.

I think with you Blocking the wall that gets the Sun - No windows and just put a couple on the same side as the door. and that will keep it all the same and cooler

Hello guys, tks for video. Glad to see project started. My comment is, as you grow more and process more animals, you will have space for more freezers. Store all canning pots, jars etc. Having a space even for vegs to be stored in dark ,maybe size of large closet no windows. Can't wait to see it finish. Much love to ya'll...

Hi Rox and Ant, just thinking about the surface water running into that wall, you may want to build a dam, swale or whatever to divert the water away from the shed wall, keep the drain that you made as it will help. If you have extremes of temperature you also will want to use good insulation in your walls and ceiling. You may want to make a section like a walk in cool room, that would be handy. I think every home needs one so we would only need a small fridge in the kitchen for frequent access for milk, butter etc. On the darkness, use some solar blocking blinds when you aren’t in there, that should help limit the suns effects on stored produce. Never had a cellar but would a cellar provide the best storage for your needs, you have probably worked through that idea and passed on it. It’s easy to come up with ideas and I know what it takes to bring ideas to reality, built a couple of homes and additions. Stay safe.

If you are going to do your canning out there instead of the house kitchen… then you will need to plumb the building for a sink and stove and work area for the equipment needed for processing. Then you need space to let your jars cool and be made ready for storage. There are great advantages to having a separate kitchen for doing your canning in. It keeps the extra heat and moisture out of the house and allows you to concentrate on the task at hand and not have to disrupt work in order to fix dinner or whatever else you might have going on in the house.We built shelves above one of our chest freezers and more shelves from floor to ceiling with cupboard doors in order to keep things away from sunlight and heat. The shelves were spaced in height to fit the different sized jars… with some floor space provided for crocks for making sauerkraut ( trust me… you don’t want that smell in your house kitchen). Anyway, just a thought from and old 72year old woman who has put up many jars through the years… Learned a lot from my mom and my granny. Everything from meats and vegetables and fruits… we didn’t have the luxury of going to the store. We lived by growing a garden and storing it all ,and hunting and fishing and canning the meat. I have great respect for y’all doing it all yourself and caring for the land and resources. God Bless

Short story, Bro, cut down his peach tree I planted a pit as they were so good but his dog was getting sick from eating so many, soon I had a peach tree, Bro. was visiting me & I said that is the perfect peach, skin comes off without doing anything, pit comes out no problem, sweet & delicious, doesn't get better than that. Bro said dad brought it to me 1 day, he also grew 1 from a pit they got at Pear Blossum,CA. They have best peaches & mom bought couple of lugs each year. So mine aren't ready yet but if you like I'll send you couple of pits. Freeze well, I diced some up & no sugar, put in zip loc bags & several smaller bags went into 1 larger 1, look& taste great!

You can always use the rubber roof mixture to paint the damaged wood and reuse it or use metal flashing on the bottom to prevent it from rotting. That’s what we did and our panels are 22 years old and never decayed.

I have an idea for your panty room to have a bit of extra storage (even though it’s not an actual "storage room") build a rack for those black bins with yellow lids. This would allow for a bit of storage for things not used on a daily. It could go on the sepration wall and would look neat and tidy.

Be sure to insulate it well to keep the heat and freezing cold out. We didn't in our canning room..more like a big closet. Had to tear everytjing put and insulate it. What a mess!😮😢❤

THe more outlets the merrier! I am big on multi-function spaces, so a food storage area like this would mean work surfaces, outlets, multiple heavy-duty heating elements (hot plates) so I could do my pressure canning and water bath canning in there, handy to massive amounts of storage shelves. Leave open places to the rafters where herbs and flowers can be hung and dried, and make sure that you have plenty of "lockers" to store 5 gallon buckets of flour, sugar, rice, etc.,) completely out of the sun and air currents. But that's just me. YOU GOT THIS!

I think you should replicate the whole barn n build it next to the existing barn to enlarge and double the space you now have. Use the end for pantry. The other two sections for a garage n work area for tools. Then pour a cement floor. Justsayin 😮

I would suggest letting the peaches ripen to a little soft. Much easier to peal in my experience.

Try transom windows for light. That will free up wall space and limit direct sunlight.

No window dark is best in the middle part to keep all for canning room if you put and the fridge and freezers in the top and a wall in the middle, if you put window in one part only

that's really gonna be cool once it's done... I'd put one small bathroom size window in on the front side of the pantry like y'all said... I was wondering if y'all are going to put a two burner cook top so you can do everything right there and then y'all can use the old sink right outside the door ir around the corner next to the ac unit 🤷‍♀️ I love the idea of an outdoor pantry it'll be so cool... I like the layout of yalls compound (yard area)

Hi, we have a Psntry with just one Window. Freezers and one Wall of Shelves for Dry Good and another Wall for Canning Goods. The other Wall we store things lik surplus Napkins, Freezer Bags, Paper Towels and such which we buy in Bulk. Also like extra Jars and Jars I’d things like Dried beans and Peas, Dressings and Plastic Freezer Containers. We have a huge Panty like yours

Have you thought about getting a freeze drier. It would be great for food preservation and long time food storage. You just will need to have access to water with drainage.p and power. Remember storage for canning should be cook and dark, no windows. Or at least use blackout film/covering, yet still be able to open if ventilation is needed.
