Great review...I recently lived with 4 Italians from Puglia for a month and they made carbonara multiple times and it looked exactly like this (with different pasta)...with crunchy pancetta/guanciale...quite dry and with minimal ingredients. The best carbonara I actually ever had, me and a Ukrainian girl made about 8 months ago...it had mushrooms, more egg "cream", more black pepper, and was kind of a fusion between RU-vid Gordon Ramsay's 10 minute version and Vincenzo Plate's version ; )

Love your content keep going but if you somewhere try to study the country dishes because carbonara is no parmesan but pecorino Romano and no bacon but guanchale which is pig cheek.

In the UK, many carbonara dishes have cream in them (which they shouldn’t) and don’t use pig’s cheek but streaky bacon or pancetta. This looked genuine, with home made pasta (not the dried stuff) and sauce which is purely beaten eggs with pecorino cheese (which is creamier than parmesan). You’re probably too used to incorrect UK carbonara dishes!

Rome is a 50/50 split for food, you need to go to the local restaurants & not the tourist traps. Personally for the type of content you normally do, jump on a train, for €50 and an hour ride South you’ll be in Naples. That’s the best street food in Italy………

That looks like a real carbonara! It’s traditionally made with egg and pasta water,not like the saucy English version for sure! Try spaghetti Aglio e olio, so simple will blow your mind!

Totally feel for you there, mate! Carbonara is really different in Italy than it is in the UK...generally no cream and a whole bunch of other differences such as guanciale and not bacon. When in a really foodie country like Italy the native dishes will always taste pretty different to what’s become the UK form of it over time. Just thinking about your channel - could be a really neat idea to go straight to the pinnacle of the dish (which should hopefully be a 10 or thereabouts) and that then gives you the benchmark for the rest of the carbonaras that you try. The best carbonara in Rome is, by all accounts: Luciano Loving your content by the way.

2:25 - from genuine excitement to sad disappointment. I found myself having those same reactions when I went to Rome, just like the ladies sitting next to you. I'm definitely looking forward to the pizza reviews, especially when compared to NYC pizza (I'm a NYC native).

The Italians dont put lods of source on there pasta, its very basic and clean flavors, over here in the UK its changed for us because we like more source ^^, same for like bolognese, be prepared for that :D

If you’re in rome you gotta try Cacio e Pepe. It’s a typical Roman pasta dish. Well worth trying!

The carbonara in the UK is terrible. Basically a bowl of pasta with sauce poured over the top. In Italy they cook the sauce in with the pasta so it soaks in and thats why you dont get lots of sauce in the bowl. Italian food in italy is the best bar none for me.

Carbonara never ever uses cream... so, if you are from the UK , my guess is the cooks use heavy cream. Cream is created by egg yolks, pasta starch water and Pecorino romano and some will combine it with Parmigiano Regiano or Grana Padano. I have American friends who THINK they know Carbonara and they absolutely don't know sh**. They are used to trash Carbonara. What they like is a cheapened version of the teal thing. Why? Cuz that is all they have ever had...they don't know any better. Perhaps you are i. that crowd.🤔

Swear you had pasta at peliccii and tbh I’ve been to Sicilia it was the worse place I’ve ever been for pasta the food ain’t nothing like Italian over here

i guarantee that is NOT bacon. I bet you it is guanciale. If not...pancetta. But if you are in Rome...guaranteed that is guanciale.

loving the Italian content Matt. As you no doubt know, Carbonara is a very simple dish made with very few ingredients: guanciale/pancetta, garlic, egg, parmesan, seasoning, the pasta (and the water). I think the joy is its simplicity but there is no where to hide, everything has to be cooked perfectly with great ingredients. I see this as the antithesis to a lot of the hipster trash food in the UK. overload of flavours and combos, usually covered in franks hot sauce or something similar. But often very tasty. Tricky!
