The Gouda didn't have oregano but djiera(cumin) in it. In Italy they have a slice of Mozzarella, with a slice of tomato, a fresh basil leaf, some black pepper and olive oil sprikeled on top. Caprese it is called.

11:20 Fun fact : It tastes like paneer becoz the process and ingredients while making Paneer and Mozzarella cheese is same! The only difference is temperature.....for paneer boiling hot milk is used whereas for mozzarella, Luke warm milk is used.

Italy, belgium, uk and Danes do great cheeses. But south asia and south America has a different taste palette so a lot of strong cheese / mould ageing does not go well in those markets

i made a fantastic dish with feta cheese......cook sliced button mushroom, tomato, onion and ripe mango( 1 or 2 whole) in butter...add feta cheese 100gms....add shredded spicy grilled chicken or normal pan fried chicken( boneless and shredded).......TASTES LIKE HEAVEN
