It's basically a double randomization. Not only do you have the random nature of the minigames (though the trivia ones are equally skill and knowledge, as well as luck), but then you have the randomness that comes with the human condition. It also cuts down on someone possibly catching a glimpse of the dish (for example, a stagehand stumbles and the cloche gets bumped askew slightly) and then hoping the game goes their way/winning the game easily.
