For the bean story with Pythagoras, he actually didn't HATE beans. He loved them to a fault. He thought beans were like the containers for reincarnated souls or something. So he refused to step on them out of respect.
The donkey eating figs does have... a little bit of a reason. Apparently, figs were a very fancy people's food back then, so it was amusing to see a "mere animal" eating it. And the joke he made was that the donkey might as well also have wine to down it with. No clue how that was so funny he died by whatever.
Dropsy is similar to edema, so its possible that Heraclitus was suffering from organ failure/damage (heart, liver, kidney) & would have died soon anyway, but there were definitely less painful ways than being ripped apart by dogs while covered in manure. Its possible that the condition that led to the edema also affected his rational decision making ability, which would make a lot of sense.

My mom's dog eats his own poop on a regular basis, and I didn't understand it either until my friend who understands dogs better than I do told me that it's to hide his presence from predators (an instinctual thing, so it doesn't matter that there aren't any predators to worry about). Since I have no better explanation, that's the theory I subscribe to.

So, uhm, we look at cat videos and find them eating silly or falling funny. Imagine a human who doesn't know that other animals eat "human" food, too, because education is low and diets haven't been studied for humans, let alone animals in any sort of extent. Giggles dying from a Donkey eating a fig is bizarre, because laughter shouldn't kill you unless you have asthma or heart failure, or something else wrong they didn't know about yet.
