Thinking about building my own. It won't be amazing like this but should be able to rework boards, as well as probe without worrying about shaky hands ha.

During the optimisation of the process, you will vary parameters and the wire feed position to ensure every solder joint is the same every time so this does not happen.

No, it is not that type of machine.

It's fine this way as the molten solder is in contact with the head and heats up the part in the process.

You can put a dab of solder on the tip prior to placing the iron on the joint. Some people do these when manually soldering.

I believe that putting solder on the iron whilst it is in contact with the pad increases the contact area allowing better heat transfer.

Its not the preferred method under IPC guidelines, however it is still perfectly acceptable to IPC
