In this talk Cyndi O'Meara discusses challenges with wheat. Cyndi O’Meara is a nutritionist, film maker - ‘What’s With
Wheat?’, best-selling author, international speaker and
founder of Changing Habits.
Cyndi graduated with a BSc majoring in Nutrition in 1984,
her special interest was ancestral foods. After graduating,
she became disillusioned by the global ‘standard’ nutritional
guidelines that she paved her own path.
Cyndi started Changing Habits in 1990, from her regular
newspaper column on nutrition. Her ground breaking
book Changing Habits Changing Lives (1998) became
an instant best seller and from there she has grown a successful
organic food company, certified online education
program, a ground breaking documentary and is currently
building a 60-acre organic food bowl which will be used

Almost a year of being wheat free, dairy free, caffeine free, and high fructose corn syrup free. I was sick all the time and now I am no longer sick ever. All the swelling in my joints is gone as well. I am 30 pounds lighter. I lost the first 15 with no exercise at all.

Dav A I was a little sick my entire life. At age 50, 62 now, I got sicker and sicker and sicker. Every night I would Google my symptoms for two hours. I was sensitive to dairy but things had gotten worse. I finally tried a gluten-free diet. Two days later my urine came out a very different color. The next day it was a different color still. The next day things were again very different. I had figured it out. My intestines were growing back. The damage that was done to my intestines by wheat was being reversed. Six months later I tried some dairy and I did not get sick. I couldn't digest dairy because of the damage that wheat had done to my intestines. This is a family thing. My mom was sick her entire life. Her parents were sick. My brother's kid has gluten problems. My sister's kids have gluten problems. My children have gluten problems. Food is my enemy. Gluten is poison to me and my family.

I eliminated grains esp wheat from my diet as well as reduced carbs/sugars after reading William Davis 'Wheat Belly' in Oct 2012. Within 15 days I had total relief from chronic idiopathic urticaria with oedema after 4.5 years of the highest dose of nsaids, antihistamines and antiasthma meds and having seen an immunologist and a dermatologist who both told me that they did not know what caused the condition. Not touched wheat since...!

My situation exactly, i decided to not eat wheat anymore after my doctor shrugged his shoulders about the cause. The hives are still unbearable even after taking a high dose of antihistamines, nevertheless i'm forever hopeful. It's expensive to be wheat-free here in South Africa as it's not easy to get shops that are wholly wheat-free.

Hello. Glad you have found relief adjusting your diet. But i think whole grains prepared in their intact form (as berries, sprouted or at least soaked and cooked) are different from added sugars. Is a world of difference. Greetings

I have been as gluten free as possible for about 18 months and have reaped many benefits. My gut problems have improved greatly and they were very bad before for years. My thinking has sharpened to the point that I am able to predict many things accurately and my body pain has been significantly reduced. At 80 years of age I rarely take anything for pain. For many years we consumed plenty of vegetables from our own garden and I canned and froze much for the winter. I have to spend more time in the kitchen now because I have to bake anything I eat. Vegetables and fruit are my mainstay foods, since I eat little meat.

What works for me is free of all grains , potatoes and fruits! Meats , some leafy greens with butter , and fermented dairy.

Thank you so much. I grew up in the great plains and was aware ot all this in the 60's even as an adolescent. I have struggled with this through raising 5 children who had food sensitivities. I struggle with health issues myself even today because of food and what has happened to it in this bastardization process. Your message is timely and probably more important than any other I have seen on TEDx. Thank you.

My story: I Have been a diabetic for close to 10 years. About 5 years ago, I joined the Peace Corps moved to a (unnamed for political reasons) Balkan state. While I was there, I consumed non- GMO foods, since they followed the E.U. food standards. I became post diabetic. No more diabetes ! When I returned to the USA, after 3 months my diabetic symptoms came back. I can only attribute it to food. In the USA, the foods, have corn syrups, corn oils, animal feeds, etc. I can only tell you my experience, but don't have a clue what caused this.

Start replacing your foods one by one. Elimination of corn syrup, gmo wheat ingredients, preservatives helps. No processed foods when possible. See what could be potential culprit (s). Maybe try the EU diet like before as well.

This information is incredible. I have always wondered about my own health not that my issues are severe but I certainly struggle with my weight and will look to make some changes to my diet by removing wheat. What an inspirational talk. Well done

I am a farmer in Punjab Pakistan - I do not spray glyphosate on food crops nor was I aware that a pre-harvest spray on edible crops is practised anywhere. I have never witnessed this practise nor heard of it from other farmers in my neck of the woods, I would be surprised if consumers of crops so treated did not get ill. As a former hospital physician I also endorse the advice for people to stop consuming any food item they suspect is making them unwell, withhold that food from their diet for several weeks before re-challenge by reintroduction of that same food to observe whether the symptoms go away when the suspected food is removed but are reproduced when it is eaten again.

I'm happy for you and the earth and water that you don't use roundup! In the USA, above 70 crops are sprayed with roundup. It makes the grains grow an extra bit as well. Sugar beets, zucchini, sweet "potatoes" or regular potatoes are also sprayed to dry the leaves and to poison people, I believe! My intestines have been pretty destroyed by antibiotics and mercury fillings and I couldn't eat anything anymore. It takes up to 8 months for the gut villi to regenerate so I have to be consistent and even after that, I don't believe I will eat crops unfit for human consumption! Fruit, greens and root vegetables that are edible raw are the true human diet in my opinion. Be well!

I toured India last year, which I suspect has similar agricultural practices as Pakistan. It impressed me greatly that the entire system of agriculture was incomparably different to the western model. The use of chemicals seemed to be extremely low, and the emphasis was on small scale, short supply chain length production. Also the foods that people consumed impressed me. Everything was fresh from the farm, and freshly prepared. I am a qualified agriculturalist and even while we were being taught the advantages of glyphosphate and growth stimulants in animals, and pesticides, I already then realized instinctively that this is fundamentally wrong. My father always warned about it - and I discovered that he had been right, 50 years ago already.

What a load of bull! I am not generalizing, but even a pakistani farm owner told me to avoid his country's produce back in 2015. And regarding indian produce, i suspect its the same. But there are organic farms in almost every country.

@@HermanLabuschagne you must have been lucky or dreaming. Most of their farms produce low quality rubbish. Most, not all. Atleast its better than some american and south american farms. U should look at chems, gmo, hormones water quality and what they feed the animals.

Wheat prior to 1949 was different. I worked for a Dr. that developed new varieties of wheat. One was named after him and he named another. These hybrid strains were able to double yields. This was done by doubling the size of the grain. Since these variety’s were introduced out wheat tolerances have decreased. By 1969 our body’s have doubled in size, diabetes through the roof, cancers way up , and on it goes. Check out your high school year books. Or watch an older movie. Compare to now.

Mike, but it is false that the makeup of the wheat kernel has changed. And cancer incidence rates are markedly down since the mid-90's even in the face of an aging population.

Huge THANKS Cyndi for sharing your survival techniques. My food story is similar: eliminating, one by one, foods that gave me hives or the runs. I now eat only eggs, bananas, occasional fish, goat kefir. Age 76 and still # (sharp).

You are wrong! No one sprays wheat with 10 chemicals and almost no one sprays glysophate on wheat. In 40 years, never. The problem with wheat is ancient wheat was 9 chromosomes and because of years of cross breeding, modern wheat is 40 chromosomes. It's too complex for our digestion.

Its important if you are a public speaker to have yoyr facts correct if you want to be credible... I believe her message as I have damage in my gut lining that I am told is from Coeliac disease... but she is wrong about Glyphosate being sprayed as a drying agent.

@@malcolmbrewer --She is correct that glyphosate is sprayed as a preharvest treatment, she is wrong that all wheat is sprayed. Less than 5% is treated and only in the northern latitudes.

I’m a wheat farmer in Montana. There is no GMO wheat and wheat is very very rarely sprayed with glyphosate. In fact I’ve never heard of that practice being used anywhere in the states ever. Occasionally it is done in northern Canada with their shorter growing season. Overall only a minuscule fraction of Canadian wheat ever sees any glyphosate and no American wheat.

Do you have some sort of data to back this up? I have only heard and read TONS of data to support the opposite! That RoundUp (glyphosate) is sprayed liberally on all non-organic wheat.

@@jennifermanzano2400 I’m sorry but your sources are biased. I know for a fact no one does it in Montana. Through farming conferences and social media I know farmers are very against the practice. From the practical side it is expensive and you drive over and destroy crop with your sprayer. No one would do it unless absolutely necessary. I guarantee you it is rarely done.

@@jennifermanzano2400 Thanks for being open minded. We work our butts off to create healthy and abundant food. Lately it seems we are being attacked. Kind of disheartening. We do use glyphosate, but never on wheat crops. Glyphosate has made no-till farming possible. Without it we would have had many more dust bowls. To reassure everyone, I happy feed my children the wheat I raise. It is safe.

do you know that all sifted wheat has to be( by law) fortified with iron (some sort of yucky supplement).i found that avoiding it ,by milling the wheat flour myself, from organic grain, helped alleviate my problems with wheat.

Its all money. I am a Type1 diabetic and have lots off problems with hidden sugars in foods so I stopped all bread pasta meat milk sugars and all processed foods 7 years ago and went vegan and only eat above ground green veg chilli peppers garlic etc o and ginger as its a root to say I have had a improvement is a under statement, this person is so right and so many problems with peoples health today is what they eat. So many processed foods are poison and are made to taste nice with chemicals. Look at brain disease that have increased in the last 20 years but people are blind or are to lazy to act and are willing to pop a pill instead off eating correctly so sad.

But isn't this being sprayed on everything? She said it's sprayed on nuts and fruit. So wouldn't that mean we can't trust any food that we don't grow ourselves?

Some people just aren't designed to eat gluten. There's nothing wrong with that. We just need to know who has celiac disease and who doesn't. And if you have been tested and you have celiac disease then stay off gluten for the remainder of your life. You will be healthier as a result.

Kinda hard when gluten is in almost everything, people with Celiac's disease actually suffer from cross contamination more then from consuming gluten. If they eat from the same dish that gluten was on before, or if it's prepped or cooked in the same places it leads to cross contamination. Staying away from gluten is easy, but providing a 100% gluten free environment isn't especially in this economy.

Just found out I have a severe wheat intolerance via blood test possible celiac disease. I am very disappointed but after a multitude of symptoms im very hopeful my symptoms are gone.

I know a few farmers that have stopped using roundup or at least use it more conservatively. It can be toxic but also necessary for huge harvests. Roundup is not an easy thing to get rid of.

I have great aunts and uncles who were infertile. I am infertile. I am wondering what I was exposed to that gave me the same problems. Kudzu is not treated and is on every continent except Antarctica. It is free. Learn about it and eat it if possible. Why do I need to add styrofoam (perlite) or vermiculite to a pot of soil when compost has been enough for eons?

Yes, Those people came to hear about dangerous food, and yet at this hospitality house they are eating dangerous food. And even today months and months later they still cannot put down their forks. Can you hear them? They just won't stop. Such gluttons, right?

The reason she felt so good when she switched to "a bit of protein" and veggies is because she inadvertently put herself on the ketogenic diet due to calorie restriction. This effect is well known with people going vegan, or fasting. That she eliminated wheat was obviously important, but not the reason for the clarity and energy. I don't know but I would bet the problems with wheat are there in countries that don't permit glysophate, or before it came into use in the 1970's. It's (probably)not the glysophate, it's the wheat.

Clarity usually occurs when someone cuts excess sugar from their diet. The brain runs better on ketones than it does glucose. From what I've read about glysophate, it doesn't kill human cells. But, our gut bacteria is not actually "human". It kills them nicely. Unfortunately, they're responsible for keeping us healthy.

So I don't understand, is wheat bad or is it the way we process wheat bad? What if I cultivate and process wheat in my garden in a natural way? Would that be bad for my health?

Having spoken to a farmer directly, on a home education trip for my son, my understanding is that modern wheat as we know it, has itself been changed, through hybridization, to produce a higher yield. This contains more gluten. Especially when refined as in white flour, our bodies cant digest it. And hence the increase in wheat/gluten intolerance in the last 50-100 years or so.

The way wheat is modified and sprayed is probably not worse than what is done to other crops including vegetables and fruits not to speak of how the meat industry is adulterated. Organic is the answer? Can,t afford it. I dont eat much wheat because i find it addictive. I eat the whole loaf then might fall asleep. I love it too much. Well my answer is to grow my own vegetables and put in the freezer. Hope it keeps me healthy and save money plus a great healthy hobby.

A commodity is a food too. There is no such thing as a "processed food factory". Food processors do not manufacture it, they process it from bulk to packages.

If this is true why aren't the reported problems much higher than stated. I eat many products containing wheat and I have no symptoms other than a dry eye problem which I know the cause of (it has nothing to do with diet). Granted the way we handle food contains a lot of artificial processes and ingredients but I'm always sceptical of anyone who has a book to sell on the topic they are talking about. I will continue as I am.

Arsenic and lead would cause illness for sure and early death. We always need to be careful with what we do with farming as for the HIV that’s unfortunate that her family was affected but completely not linked to diet as the factor VIII being used to treat haemophilia so I am failing to see how this is linked to diet. Unfortunate but not at all useful to talk about in link to diet

The idea that today's wheat is different than ancient wheat is a common misunderstanding. It is chemically identical in every way; proteins, enzymes, carbs, etc. Also, food that includes wheat tends to be high-calorie, and most processed foods contain wheat, so cutting wheat tends to lead to eating more whole foods, less processed foods, and fewer calories overall. This is not a bad thing, and has made many peoples lives healthier and happier! But pointing to wheat as the sole cause of all ills is... misleading. This speaker sounds very sure of what she is saying, but the truth is, the reasons for the increased prevalence of wheat sensitivities is not definitively known. One theory is that it is a case of the "nocebo effect", but another theory is that it's linked to the rise in autoimmune disorders, which in turn seems to be linked to our highly-sanitised society making our immune systems over-reactive to harmless proteins. This, too, is not wheat's fault. Similarly, the rise in peanut allergies is not because peanuts are bad for everyone. I suppose what I'm saying is, it's frustrating to hear someone say things which have a severe lack of evidence at best, and are demonstrably false at worst. It's strange to hear her making claims about glyphosphate ruining our gut microbes when there is no evidence that that is the case. And it's frustrating that she does all this while selling media that puts a lot of money in her pocket. Anyways. Eat however you like, and however makes you feel good. But think about /why/, once in a while. Peace and love ✌️✌️

These things will be teased out over time, I think her approach of cutting everything out and then reintroducing is a very important tactic that we can use to understand what personalised nutrition should mean to us. It doesn't mean there was no value in this talk. I've cut out gluten (at first without even realising, so definitely not nocebo in my case) and it has dramatically affected my health and improved/eliminated many of the ailments I had.

Gluten intolerance is straight up a symptom of vaccine damage. I know. I used to eat wheat until I got vaccinated w/Hep B vaccine and then eating wheat triggered instant pain--inflammatory arthritis, so I stopped. The vaccines are GMO. Hopefully there is not too much GMO wheat around and we can still save the genome.

There has never GMO wheat on the market anywhere in the world. Ever. GM crops are as safe as any other crop. Vaccines have nothing to do with gluten intolerance.

@@DukeGMOLOL Wheat is not GMO because growers/markets rejected it, not for lack of trying by mad scientists. Wheat has fantastic properties in making raised bread which also make it hard to digest. Wheat also has a toxin besides gluten that is not only hard on the soil, it is another potential allergen. Wheat should be rotated with Rye or Hemp crops for healthy soil. My experience in my body with wheat and GMO Hep B vaccine disagrees with you as does the prevalence of gluten intolerance and the quantitative correllation to vaccine madness out there. Monsanto would have you believe GM crops are safe, but there are reports of organ damage especially from heavy ration of gmo crops being eaten. GM Corn and soy as well as non-GM wheat, have been largely edged out of pet food because of the problems people notice in their pets and thus through market pressure. The rabies vaccine is an especially difficult GMO recombinant vaccine.

@@nowcastthedie Some would argue that genetic modification on the level of DNA is a violation of the sacred genetic balance of creation that took millinnia to create. There was much evidence that early Gentically Modified Organisms (GMO) caused organ damage in lab animals. This was suppressed by big money business of the pharmacueticals and Monsanto's gentically modified patented seed business. See the Jeffrey Smith books for that era. Now we are at the level of CRISPR and genetic modification has gotten a little more sophisticated but not necessarily safer. The Pfizer and Moderna covid vaccines consisted of just a DNA protein designed to trigger further (dangerous) creations in your immune system. There is a lot of money in the bio-manipulation trade and Big Pharma has control of its own industry. The liver is an organ damaged not just by GMO, but by specific reactions to a Hepatitis B virus part. A specific enzyme must be created by the liver to digest wheat which is actually a bit difficult to digest. A damaged liver is not capable of doing this. Inflammation doesn't happen for nothing. Misspent immune reactions are incredibly dangerous. Hope this helps: short shrift posts can seem meaningless sometimes.
