My mom is usually the amazing chef of the household but my mom went to visit my sister ,niece,brother in-law and their new baby. If you roast or cook/sautee it at the right temperature, it should be a little sweeter and enhance the taste. If it's too bitter, it's already burnt.

Sorry but I laughed when you added the text of "1# of chicken" the correct way is 1lb lol. You can even see the signs at stores that say lb. lb means pound.
