Welcome to another video! I'm a grad student who loves to eat simple, quick, and delicious vegan food. This video is full of meals that you can incorporate into your every day life. I'm an intuitive eater that aims to eat mostly whole, nourishing foods, but also enjoys food freedom! I don't label any foods as "good" or "bad", I just listen to what my body needs and wants. Chickpea potato curry (2-3 servings)
Ingredients:
1. Jasmine rise (whatever amount you'd like)
2. 1/2 large onion
3. 1 large golden potato
4. 1 chopped whole carrot
5. 1 400 g can of tinned tomatoes (chopped is best)
6. 1/2 cup full fat unsweetened coconut milk
7. 3/4 cup chickpeas
8. 1 tablespoon of curry powder (add more to taste)
9. chili powder, cumin, ground ginger to taste
10. 1/4 a veggie bouillon cube (you can use this or just use salt)
11. Cilantro (garnish - optional)
Directions:
1. Chop onion, potato, and carrot and add to pan on medium-high heat, allow to soften for 5-6 minutes
2. Add tomatoes, coconut milk, chickpeas, and seasonings
3. Cover and allow to simmer for 15-20 minutes until potatoes are tender
4. Serve with cilantro on top (optional)
Skillet Mac and "Cheese"
Ingredients:
1. An assortment of veggies of your choice! I used about 1 cup chopped broccoli, 1/4 red onion, and 2 cloves of garlic, and later added a good handful of kale. The garlic is essential, but feel free to add whatever you like
2. 1 cup macaroni (dry)
3. 3/4 cup tomato sauce or canned diced tomatoes
4. 1/2 cup vegan shredded cheese of choice
5. 2-3 tbsp nutritional yeast
6. lemon pepper, salt, oregano to taste
Directions:
1. Get your pasta cooking!
2. Chop up your veggies (besides kale - add this later) and add to a pan on medium-high heat and allow to cook most of the way through (season to taste)
3. Add in tomato sauce, cooked pasta, cheese, nutritional yeast, kale, and whatever additional spices you think it needs (will likely need a bit more salt)
4. Reduce to a simmer and let cook for additional 5 minutes
5. Top with balsamic glaze (optional) and enjoy!
French toast:
(For 8-10 pieces)
1. Combine 1 cup non-dairy milk, 1 teaspoon vanilla, 1/2 teaspoon of baking powder, 1 tablespoon flour, and 1 tablespoon milled flax seed or chia seeds, and a dash of cinnamon to a shallow dish and combine
2. Dip bread, allowing it to soak up the mixture for a few seconds
3. Fry 1-2 minutes each side on medium-high heat (best if fried in vegan butter or coconut oil)

Yes. I grew up in Texas and in winter my mom would make rice and put sugar, cinnamon, butter and milk on it for breakfast. I don't remember having rice as a side for other meals nearly as often as we had breakfast rice. Easy one to veganize of course. The other hot cereal for cold mornings was Cream of Wheat. And the well-loved cinnamon toast made in the oven with puddles of butter, sugar and cinnamon all crunchy and delicious. On the coldest mornings she would put our school jeans/pants in the oven to warm them up before we had to go out in the cold!! (It gets really cold in North Texas in winter and there were no clothes driers in our life. This was the 1950s.)

It all looks very good, and i want to try your breakfast quinoa as soon as possible. I never had rice with cinnamon and sugar growing up, but it sounds pretty good.

Yes, I've had cinnamon sugar rice. It seems that every country has their own name for this dish. I first heard of it as Mexican because I am Mexican but later found out that countries all over North America, South America, Africa, Asia and Europe are all in on this dish with different names for it. I have no idea where it originated or if it's even traceable at this point, probably had separate origins in different countries like body piercings, tattoos, braids, etc

All so good and healthy! You eat a lot of apples and oranges but why not berries? Even frozen ones if they’re out of season? Just curious!
