What home-canned ingredients and recipes are the best and worst to make for your canning pantry? In this video, I'll share 5 canning recipes I use all the time and 5 recipes I won't be canning any time soon. If you are learning how to can your own food but aren't sure how to use your home canned ingredients (or if you'll even like them) I'll share what some ideas to get you started. Hello Wild Nature Farm! I’m assuming you have OCD, too? 🤪🤦🏾‍♀️ If so, the good/bad news is that it can’t be cured so just embrace it! Several folks I’ve met here on the channel have shared that, which I’ll take as a compliment! Luckily, I’m already employed in a job I love (Public school Coach). Even while there were some canning misses, so much more works to give you fully cooked ingredients to start delicious meals. Thanks for saying hello!

Hi Betty! Thank you for saying hello! Absolutely! When I was a knew canner (and also someone that has limited space) I thought, "If I can this, how will I actually use this" I also skipped over so many recipes because I just couldn't picture how I'd use it. While canning is my favorite form of food preservation, I've started to realize that all of the preservation methods work in tandem (canning, fermenting, dehydrating, freezing) so I thought I'd share the "work around"--fermenting has been such a joy! WOMAN!! As my Daddy used to say, that girl could sell you the clothes you're already wearing! I'm trying all of those suggestions in short order. I'm so so glad you mentioned the soft asparagus, because I despise canned asparagus but love it fresh. That fermented one you showed sounded SO crunchy! That is definitely happening as soon as I find the next sale price on asparagus (or celery).

Hi Trista! Your comment made me laugh out loud😀! That is too kind. I’m a northern gal but my husband and dad are from the south so my meals have to pass their tastebud test! While canning is my favorite preservation method , I’m all about finding the best option (dehydrating, fermenting, etc) to stock my pantry and take advantage of sales/seasonal produce. @@BecomingaFarmGirl Hey I have a stupid canning question lol I'm pretty sure it's a stupid question any way lol. I have some meat in my pressure canner right now. I hot packed it and it's the first time I've canned meat. I didn't have enough for the last jar but I filled them with liquid anyway. Will that one still be bad bc it was only half to 3/4 full of meat and the rest is liquid? Thanks in advance!

Hey lady, I just saw that one of your comments went to spam (I think it had a blocked word in it, like "stu*id--but you weren't meaning it in an offensive way). Your jar will still be safe. but only because you under stuffed, not over stuffed. The danger in over stuffing is that the food wont fully cook/heat won't penetrate. You could also fill with items that have similar processing times (like beans) to fill the empty "volume"--does that make sense?

The carrot cake jam sounds amazing! Do you have a video on the onion soup/egg casserole? I have a couple fermenting jars but have yet to make anything. I need to get on that!

Hi Rena! I don't have a separate video on the onion soup/egg caserole. It's a recipe I modified a while back and I mostly use what I have on hand. I'm going to start to include the recipes as much as I can moving forward. Start with just one or two fermenting recipes and, over time you'll be well on your way! :)

Fermented celery is the best way to go! The book, “Fermented Vegetables” shows you how to ferment over 65 vegetables and is my go to!

JEFF! Yes!!!!! The Lord probably needs to work on my heart about this, but when my precious jars don't get returned (that I've either paid full price for or took the time to purchase a thrift or yard sale) I need them back because its part of a canners equipment and I need my stuff! Whew, some folks just don't get it :)

I've been canning berry jams and apple butter/sauce for years, but I'd never considered any of these things, and honestly the idea of fermenting is completely new to me (I'd thought it was just pickling? clearly not!), so I can't wait to try some of these things out!

Things I'll can again...tomatoes in lots of formats, lots of styles of sauces and meats. And I like doing beans in the winter for use in the summer so I don't have to heat my house to have beans in something.

So glad I followed this collab and found your channel. Its obvious you put a lot of thought and effort into putting out a great video with good ideas. I have a mature asparagus patch that we always eat frrom a couple of times and then I let it grow out. But its wasteful. I know I dont like it canned or frozen... but fermenting spears never even occurred to me. Definitely trying that and the celery, omg great idea. I havent had a lot of great hits with fermenting beyond sourdough and kraut. Everything else just turned out 'meh' okay. Looking forward to checking out your playlist later. Oh and btw,, thank you for not having a thick southern drawl or making lots of comments about your religious beliefs.

God's Consruction-anyone (including me) can look like a pro with cast-iron, a crockpot, and home canned recipes. Take your time...maybe try 1 or 2 new recipes a month. You'll be surprised how quickly you level up your skills over the course of 6-8 months. You've got this!

I grew up eating my grandma's zucchini relish, didn't realize it wasn't cucumbers till I was 21. I took some of those honey oranges, added some chicken broth and soy sauce and made a honey garlic orange chicken. Not battered and fried like take out. Try cranberry mustard, I think I found the recipe on the Ball UK, I just googled it looking for a Hickory Farms copycat recipe. My family actually prefers the homemade now. I loved my grandma's canned asparagus, it went straight from her garden to a jar. I don't remember it being mushy.

Hi Rande! Firstly, I appreciate all of the recipe tips you've shared. Cranberry mustard? Oh yea, I'll have to try that. The way you used your honey orange slices makes a ton of sense and you can bet I'll be doing that soon--that sounds delish! Isn't that the thing about a home canned pantry-you truly can get so much use out of them and eat so good. Aww, to have grown up with a grandma that made zucchini relish--now that's good livin'. @@BecomingaFarmGirl Our 16 yr old and I have some pretty bad food allergies, which lead me down the rabbit hole into serious canning and cooking from scratch. I've always cooked from scratch because it was the preference, but now its necessity. I took for granted what my grandma and mom tried to teach me, I was super rebellious. Now my mom calls me for recipes. Our daughter is super picky about when I recreate take out meals but she kills that honey garlic orange chicken. I've even made it out of orange marmalade. I put the cranberry mustard on a ham in the crockpot, my family totally annihilated it. I used it with some homemade cranberry sauce and bbq sauce for meatballs for a potluck my husband's work was having. Not 1 meatball left in an 8 qt crockpot. They said next time make 2 batches. Best of luck.

So good to see you Great Granny Free Bird! I was totally reluctant to try fermenting too, so I get your hesitation. But when I stepped back and realized that there were dozens of recipes that I hadn’t tried and that every ferment doesn’t have a pungent tang taste, I’ve been fermenting what I either don’t have time to can and it lets me keep my lids for items I truly prefer canned. The book “Fermented Vegetables” is my go to. Hundreds of recipes for over 60 vegetables. Give it a try!

👋🏾 Cassandra I want to get more jars but I thought you mentioned where you brought your jars 🫙 and it didn’t sound like ball. Maybe I misheard you. Anyone else know a good source to get jars? I need a few 1/2 gal. and gallon sized too. Happy canning !❤😊 P.S.I grew up in MD and now live in PA and it’s beautiful country here. Maybe I’ll get to see you someday.😊

I don't like the flavor or texture of celery, but I did can up a bunch in the little 4 oz jelly jars so I can use it in stews or something that just needs a little flavor without the crunch. If that makes any sense.

You’re right, you’ll still have just enough infused celery broth and I’d only be canning it as an accent, which would make me feel confident about using a smaller size (as opposed to the pint jars I was using). I’m loving the zucchini bacon pinwheel idea - but we don’t get croissant dough like that in Australia. Do you think using puff pastry sheets would work? Or is it more bready? I’m keen to give those a go!
