I love making the noodles like this! It’s one of my favorite ways! So satisfying and the oil nicely coats the noodles and gives such a great texture and flavor. I highly recommend people try this and experiment with different things they like.

Hello, you can use any pasta noodles. I normally use the regular pasta noodles, and they seem to be the right thickness and the price is right. I pay about $2 for 2 lbs at Aldi. I usually boil the entire package in my 14-in stainless steel wok. I use some for the first night in a lo mein dish and store the rest for later. They have a shelf life about 7 to 10 days. You can also use angel hair or fettuccine, but you need to experiment with the frying time. They will give you a different culinary experience. Tak, what is the optimal time to leave cooked rice in the fridge for stir frying? Also what is the best water to rice ratio in a rice cooker? I have heard 1 cup of rice and 2 cups of water, and 1 cup of rice and 1 cup of water. Please add your input.

Hello, I find the minimum amount of time to leave the rice in the refrigerator is abut 24 hours before using it to make fried rice. The longer is usually the better. Rice has a shelf life about 7 to 10 days in the fridge. The amount of rice to water ratio is variable, depending on the type of rice. For most long grain rice varieties, such as jasmine rice, the ratio is 1 cup of rice to 1.2 cups of water. The wonderful thing about home cooking is that you can make adjustments accordingly. For me, I usually prefer rice with less moisture, therefore about 1 to 1. I measure the rice but not not water precisely. I use my finger to gauge the rice to water ratio. Most of the time it comes out well.
