Your bottle looks like it might contain a rich dark bittersweet Amaro like Averna or Ramazzotti, but I might be inclined to try this with something spicier like Meletti or Nonino. What did you use, s'il vous plaît?
He really should have mentioned which amaro he used. Huge difference between something like Averna to a Fernet-Branca. Amaro is a huge family and the flavor difference is not subtle at all, amaro is just italian herbal liquor. Hell even vermouth is technically a type of amaro.
Nice video! The summit would have been a nice one to show too! (it's called like that because it was the winner creation cocktail of a mixology summit held... well you've guessed, in the city of Cognac). It's simple to make and awesome to taste!

Love Cognac! Whohoooo. Brandy also a fav. If someone makes “cognac” outside the region specified what is it called? (Such as sparkling wine is champagne made outside the Champagne region). Also: we use elderflower liqueur (St. Germain) a lot in cocktails - is that what you’re using?
I think they all are great Cognac. Overrated? I don't think so. They have great qualities at a good price tag. Is there other great Cognac in the same range? Of course but I don't think this dimenishes the quality of Hennessy.
There is no better brand over another. The brand is apparently important in the us but it’s a none sense regarding Cognac. Personally my favorite (but i’s my taste) is VSOP from Remi Landier.
The first and only time I tried Hennessy was 15 years ago when my husband ordered it on his 21st birthday. I remember spitting it out and thinking it tasted like gasoline. 🤣 This was before either of us developed our palettes. We didn’t even like coffee back then! Lol, we were such dumb kids. Now that we’re adults and can appreciate good food and spirits, we’ll need to try it again with one of these cocktails.
Great discussion, as always. I know this is going to be hyper offensive to anyone with a French or Quebecois background, but I normally slum it with local brandy when mixing and save my cognac/armagnac for sipping. Also, separate from the content... the production values on your videos are like twelve steps ahead of the game. Smart move by Hennessy.
I don’t think this is offensive, as long as your brandy has the right flavour profil to work in you cocktail. That said all those spirits, even within the same category, have different taste. So keep that in mind , maybe you are not always doing justice to you cocktail when doing so. But at the end of the day, if you’re happy with what you’re drinking, that what matters
My favourite cognac cocktail ist a Morning Melancholia: 6 cl (2 oz) Cognac 2,25 cl (3/4 oz) Chartreuse Verte 3 cl (1 oz) limejuice 2,25 cl (3/4 oz) Orgeat Shake with ice and strain into glass with fresh ice. Mint sprig for garnish.

I try and avoid cocktails usually as I am a diabetic and many cocktails contain sugar in some form or another. Are there any cocktails that are suitable for diabetics?
