Great points Steve! For strawberries, I use frozen pre-packed in sugar from Dole. With the sugar, the berry chuncks aren't as "icy" an give a better mouth feel.

Yes. Good point. I always add sugar to my I Q F fruit just to draw out the liquid in the fruit and make more of a simple syrup slurry

Hi Salim. Thanks for your comment. I would first try Pre Gel. They are a gelato product company that have distribution all over the world. They may have a program that somewhat close to you. The only other thing I can recommend is one of our online training courses. We have had people from all over the world join on these sessions. Last class we had two people from India.
