Soft proofing is fine-tuning your image adjustments to ensure that your image prints correctly and true to its colors on your printer or with your printing company. It is also useful when using the Book or Print Modules. To efficiently use soft proofing, you'll need to have your monitor calibrated.
Perceptual tries to keep the image looking the same and it may shift in-gamut colors. Relative preserves all in-gamut colors and shifts out-of-gamut colors to the closest reproducible color. According to Adobe, use perceptual when you have a lot of out-of-gamut colors and relative when you have a few out-of-gamut colors.
