Yang Youping proudly serves Yunnan cuisine at his restaurant in Beijing. Yunnan is a province in southwestern China known for fare like pounded potatoes. They look a lot like mashed potatoes, but pounded potatoes have got a unique stretch to them. Yang guides us through the peel, steam and pound process that goes into making this delicious dish.

You can actually make an almost exact replica of the dish with any waxy potato, such as Red Bliss. The potatoes used in the dish are just a specific type of waxy potato. Starch is made of amylopectin and amylose. The recipe won't work with floury potatoes, since they contain too much amylose. Waxy varieties contain almost 100% amylopectin, which allows the potatoes to stretch. This is why waxy corn feels sticky and why glutinous rice has that signature sticky mouth feel. You can also thank waxy veggies for your mochi desserts and boba pearls. In my opinion you can go with any herbs that you want. The classic herbs and chilies used in Yunnan pounded potatoes are quite pungent and spicy for some people, so feel free to use more common ingredients like rosemary and thyme instead. You might want to skip the butter though... Fat isn't really needed for this dish. I highly recommend people to try making a variation of this dish. It tastes absolutely wonderful! You're truly missing out if you never tried it.

I was told in culinary school to not use a food processor when making mashed potatoes because it would make them gluey and stretchy to the point it might break the machine. Now I wonder if it would yield a similar result.

The translation at 2:06 is incorrect. He slurred the words "外观(appearance)” and pronounced it like "外国人(foreigner)", which ended up in the translation

Chef Joël Robuchon uses an extremely waxy type of potato Calle the "Ratte", for it has a strong natural taste of potato. His dish, although not pounded, also has a little bit of stretch to it. Waxy potatoes are the way to go if you’re making anything really, it just has so much more flavour! Perhaps with the exception of fries. However, the Yunnan pounded potatoes look much healthier than Joël Robuchon’s mashed potatoes. Thankfully I live in China so I’m excited to try it!

Caution: do not expect this dish would be like your average mashed potatoes. The texture is far different. This is chewy, not creamy at all. It's kinda like soft mochi or pounded rice cake. That being said, the taste is really good.

Lmao I remember accidently making these once. Pro tip 1: user an egg beater to "pound" them for a quick meal. Pro tip 2: don't use an egg beater if your intended dish is a Thanksgiving mashed potato... At least the guests enjoyed it.
