I make my own rub and sauces for pork. My rub is a combination of brown sugar, paprika, Kosher salt, freshly ground black pepper, onion powder, garlic powder, and cayenne pepper. I rotate the type of sauce I use for pork. Sometimes I use a Kansas City-style thick and sweet barbecue sauce. Other times I use a South Carolina-style mustard sauce. Other times I use an Eastern North Carolina style vinegar sauce or a Western North Carolina style style sauce, which is vinegar-based with some tomato mixed in.
