Oh my goodness. This is definitely the "problem" with peppers 😂 my hot peppers have been sitting to dry and I'm just grinding them and putting them in the crushed pepper bottle. Any other excess gets eaten by the guinea pigs, or I just give it away to friends and neighbors if I have no immediate use for it. Looks like you could make a few pots of soup and take the next week off from cooking
You are loaded. You can dehydrate if you have a dehydrator. Also canning is work, but that’s another option. Or you can do like me…sqeeeeeeze it into the freezer anyway 🤣🤣🤣.
I have decided to can some chop tomatoes, and pickles most of the peppers.. also going to stuff some of them... que if I squeeze anything else in my freezer it will burst 😂😂
I make Egyptian Moussaka a lot because it's eggplant, peppers, lots of garlic, and San Marzano tomatoes. I eat it on pasta or as a side. I freeze my tomatoes until I am ready to make sauce. I'd say that you need a bigger freezer, an excellent problem to have. I just found out that they make units that can either be a refrigerator or a freezer. It's great if one needs to expand their freezer space.
