Nope. We can guy organic raw cheese from artisans easily and fairly inexpensively. Can't buy raw organic milk, cream, yogurt, or ice cream though. That's our priorities. Grow the healthy foods we can't access.

Awesome guys. Between the edible dairy products, the waste skim for pig food, the meat you can get from their calf each year, and the manure. It just makes my head spin how much money you are making by not having to buy all that stuff from the store. I know its a lot of work but I agree Justin it seems well worth it. Thank you for this. We have plans to move out of the city and start our own small homestead. To say I'm nervous and a bit overwhelmed about it would be an understatement. Seeing informative videos like yours, real life, is helpful and gives me encouragement that this city girl will be able to live a farm life.

Can you do a video reviewing your cold room? How has helped with what produce, the disappointments? I'm particularly interested in vegetable storage, what's the reality in storing compared to your expectations (eg- squash, carrots, etc).

Hey Justin, what I do to make yogurt is to use what was left from the last batch. I heat the milk to 200 degrees in a large pan and let it cool to 110 degrees and add the left over yogurt. If you want thicker yogurt you can add powdered milk. Mix well and place in a cooler that is lined with a thick blanket at the bottom. I then fill a large plastic bottle or pan with hot water from the tap and place that into the cooler as well. Then wrap it with more thick blankets and close the cooler, I also like to put blankets over the cooler to keep in as much heat as well. Leave it over night and it should be done. I prefer this method as it saves on the electricity and you don't have to keep changing temperatures.

We've lived in Normandy,France for the last 15years now,(moved from London,UK). The French are like Eskimos and have 57 different words for "milk" and it's derivations, (don;t even get me started on the cheeses!). I'm still trying to decided what cultured cream would be! Creme Fraiche seems to be the closest, but not sure.......

I was thinking that you could do the same but soak scratch grains for chickens in skim milk. I think that is the way that Bresse chicken is finished. I think that would make some really great meat chickens.

you should be able to strain Yogurt by hanging it in a cloth over the sink to get it thicker. Thats how they make greek style yougurt, they drain it more.

Very informative. I had never been exposed to that info. Understand your dedication to your bovine family now. That cool room really makes a difference for you. Thumbs up for all the hard work it takes. It may be "free", but the entire family has a part in the production. Do your kiddos recognize the difference in their life style?

You don't have to put yogurt in dehydrater. My mom just warms the milk and adds just tablespoon of previous culture to it to prevent it to be too much sour. She just puts in warmer location over night and in the morning thick yogurt is formed.

Wow that is so much milk! 28 gallons! And it’s crazy that you use it all in a week! We have one (Dexter) milk cow and we get about a gallon per day and we still have so much milk! We only. drink about half a gallon per day. But we do love ice cream day!

Love it, that's a lot of good stuff. We went with smaller cows (Dexters) because my wife and I just can't consume that much and no pigs yet to assist. Any "Justin Wizard Math" to determine what and how many cows a family might need on a homestead? That information correlates to acreage and pastures required to grow healthy animals. So, I need a half acre per cow; 1 bull, 1 cow, 1 steer, and 1 baby = 2 acres per pasture. If I only have 3 acres how can I supplement their diet to maintain the health of the cow? Great vid, thank you, Justin! The yogurt-making process, rather than "starter" culture, have you all tried Kefir Milk Grains to culture your milk? (healthier yogurt and kefir cheese are some of the results, in addition to whey, which some dry out for protein powder). Just wondering.

For making perfect yogurt first boil the milk then cool it a little bit not fully cool down it should me not warm but not too much hot then add 2 to 4 tbsp of previous yogurt and put it in warm place for 5 to 6 hours and then put it in the refrigerator overnight and you will get perfect yogurt like the store one

In the store, cultured butter would actually be labeled cultured. If it's just labeled butter then it's from sweet cream.

I agree with you. I am a strong dairy fan. I'm 72 and healthy and I believe in large part it's because of the organic milk and dairy products I eat. I can't tolerate raw milk because where I get it here in Italy, I'm not so sure I'm buying it fresh enough. My neighbor boils it, but then what's the use of that? Anyway, if I was younger and had a husband, haha, you bet I would have a cow haha. For real.
