We travel a lot and at times being vegan on the road means less eating out and more cooking for ourselves. It's a good thing we love whipping up vegan creations... now if only we could hire a maid to do our dishes lol. Many of you have requested a few meal ideas for #vanlife so we filmed a day in our life as we drive from Sudbury, Ontario to Thunder Bay.
Our Vitamix blender was out of order this day as we blew a fuse and could not find a shop open to replace it. We have many other things we like to eat, include, and cook with the blender so that will come on the next "what I eat in a day" vlog! Make sure you stay tuned :)
Eamon and I have been vegan for over a year now (vegetarian for a few before) and it was and continues to be the best decision we've ever made. Not only do we feel better, lighter, and more full of energy but we also live a lifestyle that we know contributes less to the endless suffering of innocent animals and to the destruction of our planet.
Below is a list of the dishes you saw us create in this video.

We love snacking on many different healthy foods. Some of our other favourites are:
- Hummus and rice crackers/raw veggies
- Fresh Fruit
- Many different fruit smoothies
- Raw nuts and dried fruits
(raisins, apples, cranberries, apricots, dates)
- Rice and whole grain crackers
- Protein Shakes

SILK CHOCOLATE MILK IS AMAZING! I couldn’t believe it the first time I tried it. I’ve been vegan for almost a month and a half now and I can’t imagine ever going back to how I felt before. I’m less groggy, tired, noticed my daily joint aches subsided, etc. Anyways love ur channel! I recently discovered this whole van life community which is INSANELY interesting!

Amazing testimony! I was so groggy, tired, and easily stressed too when eating dairy - eggs and milk while vegetarian. I'm vegan for 3 weeks now and I feel so energetic without fatigue. Brain health is everything , so this was an amazing result. Need to supplement vb12 and DHA tho, and base diet on phytonutrients and not processed simple carb vegan eats.

In physiological literature, it is given the name 22:6. It can be synthesized from alpha-linolenic acid or obtained directly from maternal milk, fish oil, or algae oil. Wikipedia Formula: C22H32O2 Essentially, a fatty component of brain, so take a supplement that isn't animal source because animals have toxins in fat.

I so enjoy your channel. I’m in my mid 50’s and married to a wonderful guy. We are preparing to VanLife before and after we retire. We love museums and historical sites and traveled a lot with our families as kids. We want to take each other to our fav places me Monterey Bay and The Pueblos and Missions in the SW of the USA. Jamie Aguas, Hi 😊👋 im also saving up for a van or camper .... Lately i was thinking maybe it would be cheaper or just as much but more space, if i was to just buy a second hand motor-home. I just wanted to get some opinions from others with the same idea as me. I literally looked up every little think i would need in the style and company i wanted and added that up to get an idea as to how much to save. I found out it would take over 400 just to build the sink. After realizing how much all this would be this kind of led me to this idea of just getting a second hand motor-home which is typically around two thousands three thousands.

Victoria Campbell hii! 🤗 All the renovations that go into living in a van do seem pretty daunting & costly, but I feel like it will be worth it & satisfying to customize it however your heart desires! But I feel it, if the motor-home is more suitable to your needs then by all means you should go that route! We all have different preferences & that's all good (as long as we're not hurting anyone of course lol) ❤️

Only just found you guys through the sprinter conversion! We lived in a van in Australia for just over a year! Missing the van life! We weren't blogging then, so no videos to show about that really. I love how healthy you eat! If you two have 2% body fat, then THATS A LOT! Im diabetic, so your menu items are a great source of info for me! Im constantly being reminded to reduce my.carb intake, and I noticed that you two have a lot of fresh, crisp veggies in your fridge! 2% body fat would be unhealthy in most circumstances - it's natural and healthy to have a little body fat, more like 6-10% or more depending on gender and where you live.

I like eating animals specifically because I work on assembling and analyzing plant transcriptomes. When I stress a plant I can read their screams, just because they have different biochemistry/metabolism doesn't mean you discount them as non-feeling organisms. They've been on Earth far longer than animals, are far more complex, and will still be here long after the last animal has died. Animals are fleeting fodder, plants are evolutionary miracles (popcorn is plant babies, so cruel).

I found this other video about a year ago about a young lady going to university living in a van. I fell in love! Hahah this video sure did give the illusion that we do wake up early but it's all a LIE. We love our sleep but on long days of driving we like to get up with the sun and arrive at our destination before sundown so that often means early wake ups! Our typical wake up time is more like 8AM :)

You two are adorable, and the van is.....well just amazing ! I stumbled on you two awhile back and think your doing a excellent job not killing each other in such small quarters. My husband and I are celebrating our 25 th anniversary together in a few days .....we always talk about life stuff on our anniversaries and I might pitch this van thing....if you ever get to Mexico ( San Miguel de Allende) give us a shout!

It's so cool to see how other people live tiny! My husband and I live in a 21' travel trailer right now, but we're going up a size and starting to build a tiny house next year. I don't know how you guys deal with the tinier space of a van but all I can say is kudos! So neat! Good luck to you on your journeys and I look forward to seeing more videos from you guys!

FYI, for the Vietnamese rice paper, all you need is to deep it in the water and get it out immediately and lay it down on the plate while it is still semi hard. The film of water left on the rice paper will absorb just right, which makes rolling the food much more easier.
