My late akka used to make them for breakfast when we were kids with a bit of coconut milk in the centre , with rice flour. Really missed them. So delicious & can't get anything like that all these years. Such sweet memories. (Mrs.Bakker)

Yeast is for instant fermentation ( if you want it to get fermented with 2-3 hours then we need yeast - otherwise just leave it for overnight fermentation and add 1/4 tsp of baking soda ( before making appam in aapachatti)

Ok - in that case just but whatever you get from shop - take half cup lukewarm water , add 1 tsp sugar and then add yeast . Let this sit for about 10 min , you will see it foams up then add that to the Appam mixture,, Instead of adding just the yeast ,, you are mixing the yeast with water sugar and Luke warm water ,, hope this helps

Yes ma,, You can add 1 tsp baking soda and make instant appam in Dosa tawa… no waiting time needed if you use baking soda,, mix it well and make it appam in minutes Or leave the batter overnight for 8 hrs and then next day right before making appam add1/4 tsp baking soda and make appams
Reduce the fermentation time then,, just let it ferment for 30 min .. it took almost 2 hrs for me to get fermented because we have cold weather ,, so if your temperature is higher at your kitchen , reduce the fermentation time next time dA,,

For instant version: Same ingredients but without yeast , add 1/2 tsp baking soda and make appams on Dosatawa like oothappam. ( but you won’t get the sour taste in this version but still you get nice texture ) . So my recommendation is to try the fermentation version below) Now for fermentation version : Same ingredients ( no yeast ) .. let it ferment 8hrs or overnight, add 1/4 tsp baking soda just 2 min before making appam in aapa chatti
