I personally would remove the entire outer covering. It is edible but it's a bit tough. Since I've always peeled it, I'm not sure if it's bitter or not but I'm guessing that it's not like those bitter turnip skins. Thanks for watching.
I have to toss a lot of this expensive vegetable because by the time you cut off the gnarles and dark spots what you have left is nearly half of what you started with. But they are delicious. I can't imagine what you mean by "When is it ripe?" It's not like a tomato... I never saw a celery root get ripe.
Don't think I've ever had celery root before... Could you make it into a steak like a cauliflower steak? Or maybe slice it super thin and use it as a springroll wrapper for steaming?
When we peel it, do we need to remove the full outer-ring like we would with rutabaga or turnip? I noticed the cut piece you showed us has a similar look to a cut turnip, and the latter's has a bitter taste to it if not removed. Tx for the helpful videos. Greetings from Montreal!
