Ingredients:
300 gr white beans
500 gr beef or lamb
250 gr tomato paste
900 ml meat broth
1 tbsp butter
1 carrot
2 medium onions
3-4 cardamom
1-2 bay leaves
3-4 peppercorns
2-3 cloves
Salt, black pepper to taste
Preparation:
Before cooking, so that the beans are quickly cooked and soft, they must be soaked overnight in plain cold water.
Rinse the beans and pour into a saucepan, cook until tender without adding salt, it is important not to overcook. Put on high heat, as it boils, reduce heat to a minimum.
When ready, put the beans in a colo-slag so that all the liquid is drained.
Meat mode in small pieces and at the same time boil the meat in another saucepan, adding one onion, carrot, bay leaf, cloves, cardamom, peppercorns, salt for a delicious broth. Do not forget to remove the foam.
Then finely chop the onion. Set aside.
Add butter (or ghee) to a preheated saucepan, put the onion there first and fry until golden brown. Then add tomato paste, fry for 5-10 minutes, stirring occasionally.
Add boiled beans, meat, salt, black pepper to the tomato paste, mix all this thoroughly over the fire and pour in the strained broth. The broth should not be small, it should look a little like soup, but this is the second dish, eaten with rice or bulgur. Cook over low heat for 20 minutes.
